    I think I've made these 4 times now… Super easy and the flavor is extremely rich and so satisfying. I do add a couple of splashes of rum =) and without question, this is wonderful to make for company. Thank you for another amazing recipe, Chef John!

    I hate that you have to, but I kinda like the way you avoid saying water-bath. To me it's just a pair of words to describe a technique, but whenever I ask someone, "did you use a water bath?" They give me the cagey-est looks, but it is the difference between something like this working out easy or failing hard. It is so easy, a water-bath is so the easiest thing, that I'll do sometimes when I don't have to. Is it in using the word bath?
