This is about as simple as weight loss food gets!! Rammed full of protein, minerals and vitamins šŸ”„

Nutrition – 500 kcal (50P, 18C, 28F)

Ingredients –

60g spinach
70g reduced fat feta
3 medium eggs
100ml milk (2%)
20g Parmesan
Salt and pepper

Method –

1. Add spinach, feta, eggs and milk into a baking tray and mix them around.

2. Season with pepper and any other spices you fancy. It’s already full of sodium from the feta so don’t bother adding salt.

3. Top with with Parmesan

4. Place in the oven for 30 minutes at 180C for the eggs to cook fully. It should swell up a lot in the middle as it browns, that’s how you know the eggs are cooked.

If you aren’t keen on spinach I expect leeks with some garlic would be superb.

  2. if you layer filo dough and olive oil to a large pie tin and add the mix as filling you can make albanian pite

  3. Has anybody actually tried doing this before? Im a cook and this doesn't look appetizing at all. Im sorry for my honesty.

  5. Tip #1: Put the eggs & milk in FIRST. Mix them well and then add feta and spinach.
    Tip #2: Microwave the spinach separately for 60-90 seconds, let cool, and squeeze out as much water as you can before adding it to the egg mixture. Fresh spinach has a LOT of water in it and can make the whole dish have a watery texture that can be a bit hard to take.
