  1. This recipe can be used to cook beef, pork, and chicken livers: poke some holes on both sides of the liver, soak it in milk for 1 hour. Rinse it with clean water and pat dry with kitchen paper. Pan fry 2 cups of kosher salt with 1 Sichuan peppercorns and star anises until the salt turns slightly yellow. Add half of the salt mixture to a pot, lay the liver on the salt, cover with the rest of the salt. (Make sure you don’t use nonstick pot cuz the salt can ruin the nonstick material.) Cook over medium low heat for 30 minutes. Dig out the liver and cut it into thin slices. Serve with a soy sauce chili oil dipping sauce.🤤

  7. Grill it, serve it with brown gravy and cooked white onions. Our family cooked this rarely but we had cucumbers sliced with sour cream mixed together and added salt and pepper.
