    Lol the fast cut and the camera angle to hide the raw chicken on the most left. I love hainanese chicken but it's raw brother.

    It's all about the bones. Boiling extracts the collagen from the bones, which then permeates throughout the meat.

    Don't boil boneless meat. Do boil bone-in meat.
