I'm Cuban and we make a similar meat mixture but with raisins and spanish olives. It's called Picadillo! – it makes a fantastic filling for empanadas. Thanks for the tip on using the puff pastry dough. Never made them like that but that makes them super easy! Thanks!

You should always cook your onion FIRST.
Thanks for the recipe. I kinda just use the base of the empanada shaper to cut the dough since it’s the exact size. But that’s cause I just don’t wanna bring out another tool.

Dear AB: Is there such a thing as a pot roast recipe made with hamburger and not fall-off-the-bone shredded beef, and some sort of meaty gravy? I think I might even try making something like that. Have the Italians thought of that, or the French? With the peas and carrots you might think a diced onion would be good too but only if the onion is crunchy when the dish is finished cooking, I think, I like crunchy onions. Okay, tell me how to keep the enfolded ingredients from pooging through the hole when you close the mold, my molds always make a pooging out volume through the hole in the mold; I haven't yet figured out how to fix that, maybe it's my gluten in my dough mixture, because my pockets don't hardly hold together when the mold is folded over. I may try this recipe with one of mine I call "hamburger stew", only with somewhat less beef broth and see how it may be seasoned and make a pocket filling out of it, or a pasty or whatever they are called.
