Steamed Chicken in Black Bean Sauce 豆豉蒸鸡
Ingredients:
Serves 4 pax

2 pieces boneless chicken leg (520g or 18.35oz)
1 tablespoon fermented black bean sauce
1 tablespoon oyster sauce
1 tablespoon light soy sauce
1 teaspoon fresh young ginger juice
1 tablespoon Chinese cooking wine (Shaoxing Huatiao wine) – optional
2 stalks of spring onion (use the white part to marinate the chicken and the green part as garnish)
3 cloves of chopped garlic
1.5 tablespoons cornflour
1 tablespoon sesame oil

  1. Made this tonight and it was super delicious!! My first time steaming chicken like this, too. I added two small chilis and some tofu because I had a lot of sauce at the end. Came out perfect! 😋

  2. Reminds me of that hawker centre by the side of Former Standard Chartered Building, along Singapore River, at Battery Road during the late 80s. A stall was selling this steamed dish and oyster sauce vegetables was available as well. $2 per plate with rice during those days and was considered "atas hawker food" or "expensive".
