As a child I was fortunate to be able to watch and participate in him Tempering Chocolate on a huge Marble Slab. Also was able to help him create seven layer striped Truffles, Cordial Cherries and other incredible Chocolate Novelties for Easter and Christmas.

  11. You can also speed up the initial melting by heating the chocolate in the microwave in 30 second intervals until its pretty melted. Just helps speed it up.
