    After seeding, place bowl back on double boiler if you need to bring it back to 88-90F for use. Make those DECOR AND SHOWEM U A BAKER!

As a child I was fortunate to be able to watch and participate in him Tempering Chocolate on a huge Marble Slab. Also was able to help him create seven layer striped Truffles, Cordial Cherries and other incredible Chocolate Novelties for Easter and Christmas.

    The real chocolate is in Mexico or Guatemala(antigua) and you know that my chef…. The real chocolate is in your original land… there in USA is pure fat mixed with “chocolate”…

    You can also speed up the initial melting by heating the chocolate in the microwave in 30 second intervals until its pretty melted. Just helps speed it up.
