The Best Breakfast Burger | SAMSEATS

This is my GO TO breakfast burger at the weekend. Whether you are hungover or just craving a burger for breakfast, this is the one for you. Sometimes (most of the time let’s be honest) they can be overwhelmingly stodgy and rich. Here I am going to show you a little twist on this. We have light and fluffy Japanese milk bread buns, a fresh green chutney, aromatic pork patties, crispy potato rostis and of course a classic fried egg. Buns:
Makes 6 buns
Yudane:
100g strong flour
80ml boiling hot water
——
Dough:
190ml whole milk
40g caster sugar
8g / 2tsp dried yeast
250g strong flour
5g fine sea salt
50g butter (cubed, at room temp)
——
Egg wash (1 egg beaten with 1 tsp water)
——
Extra melted butter to brush over the top

Sausage Patty:
Serves 6
660g pork mince / sausage meat (600g fatty pork belly & 60g leaner leg meat)
3 tsp oregano
6 tsp fennel
3 tsp dried chilli

Chutney:
Serves 6
Bunch of coriander
Bunch of mint leaves (stalks removed)
1 x garlic clove
Small knob of ginger (1″ thick)
1 small green chilli
1 tsp cumin
Juice of 2 limes
Pinch of salt

Rosti:
Serves 6
2 large potatoes
1/2 onion
2 tbsp flour
1 tsp salt
1 egg

Other:
Eggs for frying
