    JW Hot Chocolate:

    Hot chocolate

    • 3 cups whole milk

    • 1/4 cup heavy whipping cream

    • 1 lb chocolate, finely chopped (we need to finely chop on camera)

    • 1/4 cup sugar

    • Generous pinch of salt

    • 1 teaspoons vanilla paste optional

    Topping:

    • Whipped cream (heavy whipping cream and sugar)

    • Shaved dark chocolate

    -heat milk, cream, sugar, vanilla bean paste until very hot but not boiling.

    -stir in the chopped chococlate until melted.

    Return to low heat if needed to get chocolate to melt completely. Whisk constantly and immersion blender and pass if necessary.

    -top with whipped cream and shaved dark chocolate

    I don't get the obsession with using chocolate rather rhan cocoa powder. Same with brownkes. Chefs have tested this extensively and using cocoa powder allows for a stronger chocolate flavour with more control over the milk and sugar levels. Chocolate has milk solids that dilute the chocolate flavour.

    Yes I always use Abuelitas Mexican hot chocolate and its the mothafuckin goat of Mexican hot cocoa I can take a sip of that and die happy

    I love your italian hot choclate but it's just a bit too heavy. How can I lighten it? I tried adding more milk, less sugar, less starch but just can't do it. What should I do?

    I got more reliable results with cocoa powder, starch, sugar and salt than with real chocolate. It becomes a more pudding-like consistency which i like and I avoid the problem that the melted chocolate and the milk dont emulsify the way they should, which happens a lot to me.
