Do you serve any of this stuff at your restaurant? Menu seems quite small but you show a lot of stuff on YouTube

This looks delicious. I must say Alioli is naturally vegan, just garlic and olive oil.

this restaurant seems to have an obsession with vegan sauces paired with not vegan dishes

I'm curious, why the decision to use soy milk? How does it compare to almond, oat, etc?

  7. @countryside_guy

Aioli – made with garlic and oil. That's pretty vegan to start with I reckon.

I want to know what happens to the kombu after the mushrooms have been poached in it.

I’m confused. I think they did this because they want people to comment. They didn’t put eggs in the aïoli, but they bred the mushrooms and eggs. They did this because they want cloud.

    Vegan Aioli?
Do you mean an aioli, where a real aioli is made with garlic and oil?
Wouldn't garlic and oil be considered vegan?

No point in vegan aioli when there’s eggs in the coating of the mushrooms

Love the bravery of bringing back your nan's fancy dishes and actually making them – probably, I hope, signs look positive… – good
