  10. FYI: To those who don't use beans. Chilis MAIN ingredient is beans. If you add meat, it's called chili con carne. If there are no beans, then it CAN'T be classified as chili, but just ground beef in sauce.

  13. ATK gave a quick food chemistry pro tip on their chili video and we learn that the spices used in chili are oil soluble and add huge amounts of flavor. Just stir it before serving. However, they used 85% lean so not as much rendered fat and maybe removing a little (not all) from 80/20 wouldn't be taking too much away. Also, mixing the meat in a mixture of 2 Tbsp of water, 1-1/2 tsp of salt & 3/4 tsp of baking soda and letting it sit for about 20 minutes is supposed to help the meat brown faster. Although I didn't notice much when I tried it. YMMV…

    Add some 70% – 80% Cacoa as it simmers. Maybe you did it on one of your other chili videos. It gives the chili a silky shiny texture and the flavor is awesome. I'll dump in a bottle of Modelo or Tecate or your beer of choice for the liquid. Sabroso!!
