The Return of the Fancy Sandwich!

We call this “the fancy sandwich,” and it’s one of our favorite summer meals. It’s not a recipe—it’s a vibe. Inspired by the viral Italian grinder but made with whatever we have on hand. Here’s how I make it:

Dressing:
– Big scoop of mayo
– Spoonful of Dijon mustard
– Splash of pickle juice or banana pepper brine
– Salt, pepper, garlic powder, onion powder, red pepper flakes
Stir until creamy and well seasoned. Taste and adjust.

Slaw:
Toss shredded iceberg lettuce in the dressing. Let it sit for a few minutes if you can.

Assembly:
– Lightly toasted bread
– Deli meat (ham today)
– A slice of cheese
– That dressed-up slaw
– Sliced tomato and pickles

Crunchy, salty, tangy, and somehow always hits the spot.

Those tomatoes look tempting and tasty. Have to avoid them but this looks yummy and I will be making one sourdough bread. Thanks for the inspiration for a different sandwich.

Are you supposed to use lettuce for the slaw or you used it because that’s all you had?

This is amazing! And absolutely it is a recipe lol, I never would have thought of making a salad dressing in a mayonnaise jar that way!

That slaw dressing you made is the same ingredients I use for my tuna salad. 😊

Don’t forget to look for the Stacker pickles too! One strip works for a regular sandwich, 2 for big subs or burgers! I found those at the Dollar Tree and have been buying them ever since! I’m definitely trying this fancy sandwich recipe too! ☀️💕

I absolutely LOVE using pickle brine to flavor things. I love pickles so it makes sense!
