  1. Mom's Curd Rice Recipe:
    Rice (cooked) – 3 cups
    Curd – 1 1/2 cups
    Water – 1 cup
    (Add more water if needed)
    Salt – 3/4 tsp (more, if the curd is sour)

    Tempering:
    Oil – 1 tbsp
    Mustard Seeds – 1/2 tsp
    Split Urad Dal – 1/2 tsp
    Dry Red Chilli – 5 nos
    Curry Leaves – 1 Sprig

    Procedure:
    1 Mash the rice well using a wooden or using your hands.
    2. Add curd and mix. Add water gradually and mix until creamy. Season with salt.
    3. For the tempering, heat oil in a pan. Crackle mustard seeds and then add split urad dal, dry red chilli and curry leaves.
    4. Add it to the curd rice and mix.

    Tips:
    1. If you're packing the curd rice for lunch and cooking it in the morning, use half quantity of milk and half quantity of curd. This way, the curd will set perfectly by the time you eat it at lunch.
    2. If you're cooking rice fresh for curd rice, add more water and overcook the rice. This will make it easier to mash and creamier.
    3. You can add many more ingredients for the tempering, as per choice (chopped ginger, green chilli, cashew, etc)

  5. We also add chopped onions chillies and coriander leaves…it's delicious and it's summer season favorite dish????
