    So apparently authentic Alfredo is just Parmesan & butter. That might be okayish with toasted walnuts, but still why bother?

    Some people need to stop trying to cook, first fucked it up with margarine, then made it worse with walnuts, then completely ruined it with fake alfredo sauce. Stick to takeout "recipe author"

    Walnuts in pasta works. Add some cooked lentils and pre-made tomato sauce instead and you have a vegan Bolognese.

    When I saw nuts and Alfredo I assumed we were going like vegan cheese made from cashews territory…I’m always so bewildered by the turns these recipes take😂😂

    I made Alfredo from scratch from a recipe I found online and MAN was it so good and very garlicky. Ironically enough, it was the same recipe I had found few years ago when I wanted to try making it. Guess it was fate for me to find it again ❤️

    To be fair, true alfredo is actually relatively bland. It's basically just fancy buttered noodles. The sauce is made from a lot of butter, parmesano reggiano (and romano, depending who you ask), and pasta water. Seasonings are simple with just black pepper. One can also add salt to taste if they prefer, although the traditional recipe doesn't call for it. There is absolutely NO cream or anything involved whatsoever. It's a very simple dish; similar to cacio e pepe, but with a different type of cheese and less pepper. Alfredo is one of the five or six basic pastas that are essential to Italian pasta dishes, and every Italian learns how to prepare them as soon as they're tall enough to reach their stovetop 😂.
