  2. So, I live in inconsistent temperatures and there are few places in the house where I live that are suitable to ferment in a fermentation crock tldue to having fairly stable temperatures. I've had major difficulties with my crock sucking in the contaminated water from the water seal when the ambient temperature shifts from pretty warm to cold overnight. So the only way I've been able to ferment anything is with mason jars and airlocks inserted into the lid through a silicone grommet. This is fine and because there's an exact fill line inside of the airlock, any many also come with lids nowadays, I don't deal with problems that would result from temperature fluctuations, and an added bonus is that the water doesn't dry up nearly as fast and never gets sucked down into the ferment to contaminate it
