Served hot or cold. It’s a great salad, side or main meal on its own. Or top with grill tofu, mushroom steaks, tempeh or whatever you fancy.
Bacon, Thousand Pea Pasta Salad
1 Baby Shells or pasta of choice (standard retail box) 8oz Gluten Free chickpea pasta was used here.
1 Package V Bacon, diced (or make your own recipes in Wicked Healthy Cookbook)
1 Onion, diced
4 garlic cloves, minced
1 Smaller bag frozen peas
Handful of pitted kalamata olives, chopped
1 -2 Tablespoons small capers
1 bunch parsley, picked and chopped
¾ cup v mayo or plain unsweet vegan yogurt (forager or kite hill)
Drizzle of olive oil
Salt and black pepper to taste.

I went Vegan January 1st for Veganuary and it's now May and still going with no intention of going back. I discovered your channel (and a couple of others) and there's SO MANY recipes I want to try that my laptop browser is close to crashing daily due to the amount of tabs I have open. If I'm honest I prefer your channel because you have a dog that you clearly love and that obviously makes you a good person. I've got 2 Golden Retrievers and I prefer their company to that of most people. 😜 😂 Nah, not joking!! Love and Respect. You wear your heart on your sleeves (literally).

I’m a cancer survivor and the first thing I’m going to do when my immune system is strong enough is to get a tattoo of my fur child who was with me throughout my cancer journey but succumbed to cancer herself 2 years ago. I love your tattoos.
