Looks Fantastic. Red Wine Gravy might be ok for Venison Sausages, but Caramelised Onion Gravy would be the standard for Pork Sausages.

I’m still inordinately proud of the fact that when I decided to make Yorkshire puddings this past Christmas…made them with roast beef and onions, and baked potatoes…they came out lovely and crispy. It was my first time making them, as well!
Measure? For yorkies? I've never done that, I just go on instinct. EDIT: I was screaming at the screen, NO! NO!!!!!! Don't just use the batter, let it rest, give it time for the mixture to develop. Also by that time most lumps would have gone.
I just copied this recipe and once again the middle of the batter is soggy??? what am I doing wrong.

I have thrown down the oven gauntlet.
