INGREDIENTS
For the brine
1/3 cup (80ml) white vinegar
3 tablespoons (45ml) water
1/3 cup (65g) sugar
3 tablespoons (45ml) neutral oil
1 1/4 teaspoons fine sea salt
1/4 teaspoon white pepper
Remaining ingredients
1 pound (454g) elbow macaroni
2 5-ounce cans albacore tuna in water – well drained
4 hard boiled eggs chopped
1/2 cup (45g) diced red onion
1 cup (170g) peas
1/2 cup (75g) chopped dill pickles
1 cup (240g) mayonnaise plus more to achieve a smooth consistency

  1. I'm with James here, I love tuna mac salad. And like him, I could happily house a whole bowl of it. I suppose it shouldn't be a meal, yet… it could be!

  2. Funny thing… my mom used to stretch the tuna salad by adding macaroni so I had tuna macaroni salad sandwiches for my school lunchs. I still fondly remember it but can't do all those carbs anymore 😅

    I use mayo as a utility condiment. Just for lubricating and moisturizing breads to prevent dry sarnie

  4. So we salt the cooking water and also brine? That will guarantee there will be no bland pasta. I've never tried brining pasta but I love the idea

  6. THANK YOU for the comment about Duke's. I generally use the store-brand mayo, and I got the teeny tiny bottle of Duke's, and thought it was going to blow every other mayo out of the water. Nope, can't tell the difference between whatI was using, and Duke's. Back to the store brand!!

  7. I subscribed because I drain my tuna can the same way. The people who use a strainer drive me nuts. Why making more thongs to clean up?😂

  8. I’m going to try your brine recipe the next time I make this. My usual method is to add whatever vinaigrette I have in the fridge to the cooked pasta and let it sit in it as I prepare everything else.

  9. I’m from Hawaii and this is a favorite there but have never made it myself. I have all the ingredients ready to go!!!! Shrimp/Mac is also popular in Hawaii.

  10. The only question I have is your choice of tuna canned in water rather than canned in oil. It’s my understanding that tuna in water is less flavorful than tuna in oil. I have found this to be true for me at least. I always use a strainer to get rid of the excess oils. So, why the water choice? 🤔
