I love that Ilearned about the reasons why land creatures don't grow as large as sea creatures in a video about tomatoes. You're something special, Kenji, and i mean that in a good way. By the way, this video inspirited me to refresh myself on the difference between a brachiosaurus and a brontosaurus, and it's incredible to see how small they are compared to a large blue whale!
I wonder if this is partly why heirlooms tomatoes have the capacity to taste so much better, given that they have a more dense internal structure they can support themselves better through ripening

Seattle gardener here. It’s true the vine ripe tomatoes are primo, however I will say that the gas is also naturally occurring in the tomato itself. In fact I prefer to harvest my tomatoes just before they ripen, that way the birds and pests don’t get to it sooner. If you put them in a paper bag or cardboard box stem side down for a couple days, they help each other ripen to the perfect amount, and naturally. Way more control. Also I think the flavor thing is really more about if it’s in season (for the growing region) and less about vine-ripening.

that's not exactly true. All of them are harvested when they are pink in color. They turn red eventually in the container over about a week. The only difference size makes is that larger tomatoes need to be packaged with more care, they are basically stacked like a tower in rows, with the stem part downwards. The smaller ones can just be dumped in crates because they get squished harder. In the end, they all are just as bland and terrible.

A good argument for growing your own tomatoes and eating fresh when storage/keeping isn’t needed in. But, he makes an excellent point for late or out of season tomatoes. Our late picked not quite ripe tomatoes have the same problem that he mentions.

If the surface area goes up by a factor of two, the mass would go up by 2 to the (3/2) power, not 3.
