Y is for Yam Gnocchi

Are Yam gnocchi better than normal gnocchi?

Not really. But they aren’t bad either. Honestly, the Italian alphabet doesn’t have a letter Y, so I wasn’t working with much on this one, and I had some extra sweet potatoes from Thanksgiving. So if you’re staring down some extra sweet potatoes and don’t know what to do… give this a try.

1 lb Sweet Potatoes
½ tsp Nutmeg
½ tsp Salt
1 Egg Yolk
½ c AP Flour (As Needed)

50g Butter
4-5 Sage Leaves
4-5 Broccoli Stems
Parmigiano-Reggiano Cheese Wheel (Optional)

Wash and poke the potatoes before baking at 400F for 1 hour (Or until fully soft if your potatoes are smaller)

Fully mash the potato flesh until there are no clumps remaining. Either is a ricer, sieve, or meat grinder.

Combine the nutmeg, salt, egg, and flour until a loose dough forms.

Without overworking or kneading the dough, add flour until the dough stops sticking. Form into small snakes and cut into small, even chunks about the size of your fingertip..

Roll each dough chunk over a gnocchi board or textured surface to make grooves, then coat in flour to prevent sticking.

If you aren’t cooking all the gnocchi, you can freeze them on a piece of wax paper and then store for months. Just drop in boiling water when ready to cook.

Blanch the broccolini in boiling water for 1 minute, then chill and dice into rough pieces.

Brown the butter in a pan, then add the sage leaves, and broccolini.

Boil the gnocchi for 3-4 minutes until floating, and finish with the sauce and broccolini in the pan.

Instead of finishing in a parmigiano bowl, you can just sprinkle parmesan on top for a very similar effect. But if it’s a special occasion, just carve out the bowl, add a splash of high alcohol grappa, and light the bowl on fire before adding your gnocchi with a splash of pasta water.

  2. Please do ABCs of other cuisine if you can! Mexican or Chinese might be good starts. Or you could do American cuisines. There are many different influences

  3. I love the reasons why! I usually go with the flow for topics I don't really need to understand, but in the back of my head I'm always asking "why" (just ask my parents and old teachers 😅)! Everything was both super informative but very concise, thank you!

  4. No. I was so in love love with this series. The sweetpotatoes are ok but now you also make rich people mac n cheese😢😂

  5. I still think eating out of a giant wheel of cheese is overrated and too corny to try, but it probably tastes pretty good doing it like that

  6. I’m not really a big sweet potato fan myself, too sweet for me. However, the recipe that you presented in that video looks exceptionally exquisite.

  7. Your overseer actually showing you where to go is crazy. My overseer told me to go to industrial complex, and then from there neglected to tell me anything other than “this is food” “this is danger” or “there is a shelter somewhere in this direction” which always led me very far away from my known shelters and never told me where to go to actually get the shelter when I was getting somewhat close. I then proceeded to somehow explore 90% of industrial complex without finding any karma gates, and eventually gave up when I got a blue lizard tamed and I couldn’t navigate any of industrial complex while keeping it alive. So I went back to outskirts and eventually I ended a cycle and my blue lizard wasn’t with me, and they never came back so probably died. At that point I decided I’d just try to go to a region other than industrial complex, and after a few failures to find a shelter in drainage system I ended up in farm arrays and since there was a shelter there I eventually navigated my way through and initially went down to subterranean but realizing there was no way back and seeing the horrors of the enemies there I decided I should what’s in the other direction, that eventually led me to sky islands where I entered karma hell and was unable to leave due to low karma, so that was a fun outcome of not being guided by the overseer.

  8. Ah, yes. The Italian "Yam"… They're definitely not called sweet potatoes in italy, england, france and most everywhere else.

  9. Those are sweet potatoes, not yams!! True yams are not orange! A true yam from Africa is an off-white flesh color!

  10. L O L adding that to make it more healthy. The least healthy thing in the dish is the yam understanding caloric density, macros, and nutrients and inflammatory properties is the only way you achieve healthy, so good luck. I’ve done my research it’s time to put all the myths to bed.

  11. W is for write-off. You too can afford a wheel of reggiano-parmigiano by starting an A to Z of cooking.

  12. The end of this series shows how far this channel has come. Hands down best food shorts on the platform!!! Good job, can't wait for what's next on the menu

  14. I've never had yam gnocchi, sounds interesting, ill definitely try it. You should try grappa in your cheese wheel to melt it rather thann vodka, adds a nice fruity / spice flavour.

  15. I asked Santa for you to come to cook for me, but I guess I wasn't a good girl this past year 🤭

  16. You're really squeezing every second of the Shorts format, it doesn't feel like I'm watching a short vid, and you do that without all the insanely quick montages and sped up talking. Well done!
