RECIPE:
4 eggs
1 cup frozen cauliflower rice
1 cup cheddar cheese
3 sausage links
2 burrito wraps(i used siete brand)
Sour cream( i used forager brand)
Salsa( i used frontera double roasted)

First prepare all the ingredients:
Cook the frozen cauliflower rice in a pan with salt and pepper until warmed through, about 7 minutes. Whisk the ggs season with salt and pepper, and scramble them in a pan. Grate the cheddar cheese and cook the sausage then chop it up.

Make the burrito:
Warm the burrito wrap in a large pan until soft and pliable, about 30 seconds per side. Add some cauliflower rice towards the edge and top with eggs, chopped sausage, some cheese, and sour cream. Fold the burrito and then make the second one.

Preheat a pan over medium heat with 2 teaspoons of oil and a pinch of salt. Place both burritos seam side down and cook until golden brown, about 3 minutes. Flip and cook another 2-3 minutes. Remove and put a layer of grated cheese in the pan, the same size as the burrito, and then put the burritos back in. Allow to cook until the edges get golden brown, about 3 minutes. Use a spatula to carefully remove the burritos and put them on a plate cheese side. Let cool for a few minutes then enjoy!

  1. I love how you are montessori parents!! I did this for my daughter as she was an only child at the time till 6.5 than I had one child within a year of the other

  2. Really soak in these years with Rose. They grow up so fast. I get depressed even thinking about her growing up. I wish she was a baby forever.
