4 Levels of Pudding: Amateur to Food Scientist | Epicurious

We challenged chefs of three different skill levels – amateur Onika, home cook Beth, and professional chef Frank Proto from The Institute of Culinary Education – to come through with their best pudding recipe. Once each level of chef had presented their creation, we asked expert food scientist Rose to explain the choices they made along the way – both good and bad. Which pudding are you putting on the menu?

  1. frank used a bunch of flavors that work really well together, i bet his pudding is out of this world, no offense to the other two but they are a bit plain and unoriginal. at least beth went the extra mile to make it from scratch until onika who used medicine tasting instant banana pudding mix.

  2. Chocolate pudding needs chocolate. Mix everything but the coacoa powder together as is, but before combining everything, melt real chocolate in the milk!

  3. Frank: for our next recipe, we only need some atoms of hydrogen, oxygen, and charbon

  4. You can buy panda extract on amazon. It's kind of like a southwest Asian vanilla. It is really yummy.
