  4. Ingredients
    For the base:
    280g shortbread biscuits
    75g melted salted butter
    28.5 Mini Kinder bars

    For the cheesecake layer:
    250ml cold double cream
    200g Kinder chocolate
    500g cream cheese, room temperature
    120g icing sugar

    For the topping:
    150g white chocolate
    90ml double cream

    1) Line a cake tin with baking paper.

    2) Finely crush the shortbread biscuits using a food processor or a bag and rolling pin.

    3) Add the crushed biscuits to a bowl and mix them with the melted butter until combined.

    4) Line the edge of the cake tin with the mini Kinder bars.

    5) Scoop the base mix into your cake tin and press it down firmly.

    6) For the cheesecake layer, whisk the double cream to stiff peaks in a large bowl.

    7) Melt the Kinder chocolate in the microwave (500W) in 1 minute bursts, stirring until melted.

    8) Let it cool, then whisk together the cream cheese, icing sugar and melted Kinder chocolate until combined.

    9) Fold the (now whipped) cream into the cream cheese mix.

    10) Scoop the mix onto your base and smooth it out.

    11) For the topping, melt the white chocolate and double cream together in the microwave (500W) for 1 minute 20 seconds, stirring gently until smooth.

    12) Pour the topping over the cheesecake and smooth it out.

    13) Refrigerate for 6 hours minimum or overnight if possible.

    14) Enjoy!
