In one of the old village neighbourhoods of Surat lies The Breathing House – a house for a family that has been dwelling in the site for many years. This home was made after bringing down their old property while staying true to their values and traditions.

A triple height central courtyard flanking the northern wall brings plentiful light into the house throughout the day and the stack effect facilitated by the sectional play keeps the indoors comfortable.

The facade is clad in a pink sandstone neatly composed with various balconies and greenery adding warmth to the western elevation while making the indoors light and breezy. Design of the bridge on the topmost floor offers a beautiful experience where the play of light and shadow can be enjoyed. It leads to a common terrace and meditative space from which the whole essence of the house can be blissfully savoured.

Peony Growing Guide!!! How to Plant, Grow, Harvest, Divide, & Transplant Peonies

Peonies will grow and flower abundantly for decades when planted correctly. The bare roots should be planted in the fall or early spring. They should be sited in full sun, planted into rich, well-draining soil, and the eyes should only be 1 ½-2 inches under the soil surface. If a peony is planted too deeply or sited in deep shade, it will produce foliage but no flowers. They perform best in zones 3-8, with a soil PH of 6.5-7, and need to experience at least 60 days of cold winter temperatures to flower abundantly.

Most cultivars grow to a height and width of approximately 3×3 feet so give them lots of room in the garden, or plan to move nearby plants as the years go on. If you’re growing peonies in rows for cut flower production, the roots should be spaced 24 inches apart, with rows that are 18 inches apart. Good air circulation around the plants is vital to preventing bacterial and fungal diseases.

Peony roots are sold by the number of eyes or grade number. The more eyes a root has or the higher the grade number, the sooner you will get flowers from that root. Here I have a grade 1 peony and I can see the presence of 5 eyes.

To start, loosen the soil where the peony root will be planted and add some compost to the area. Dig out an area one and half times the width of my root. Position the peony root so that the eyes are 1 ½ -2 inches below the soil surface. This is the most important part. Next, backfill with soil, firm it in lightly, and give it a deep watering. Mulch around the perimeter of the peony to help suppress weeds and retain moisture. Just take care not to pile lots of mulch on top of the root because this can cause it to become planted too deeply also.

Peonies take a few years to become established. Don’t worry if the first year you only see foliage, and the second year you only have one or two flowers. As the years pass the root system and plant will get bigger and the peony will begin to flower with abundance. The first thing you’ll see in spring is the red sprouts emerging from the earth. Then the leaves will begin to unfurl, and by late May into June they will begin to flower. Large established peonies benefit from a support system so their heavy heads don’t fall to the ground. You can use special peony supports or simply surround them with stakes and twine.

Another option is to cut your peony flowers. Since the best time to cut them is in marshmallow bud stage, which is when the bud squishes easily between your fingers, you’ll be harvesting the flowers before they have a chance to get top heavy and fall over. You can even store peonies dry for weeks by picking them in marshmallow bud stage, wrapping them in brown paper, and laying them in your refrigerator. When you want to use the peonies, remove them from storage but keep them wrapped, recut the stem ends and rehydrate them in a bucket of water. In a few hours they’ll look like they were freshly cut from the garden.

After your peonies are done blooming allow the foliage to remain in the garden until the first frost kills the leaves. At that time remove all the dead foliage to prevent disease.

After many years have passed, you may want to divide your peony. This is best done in the fall. Start by cutting off all the foliage at ground level, then dig and lift the entire root from the ground. Next, spray it down with water to remove most of the soil so you can clearly see the eyes. Look for a place where it may be possible to pull the clump apart or use a sharp knife to divide it into sections. Each division should have at least 3 to 5 eyes and a healthy mass of roots. Divisions with less than 3 eyes will grow, but it may be several years before the plant produces flowers. Repeat the planting steps we talked about earlier and you’ll be surrounded by peony blooms in no time!

One of the things I’ve often felt most embarrassed about is my very low threshold for pain. People brag about how high their pain threshold is, but I can honestly admit, I’ve almost passed out over a paper cut, I’ve shed tears over a stubbed toe, and don’t even get me started on period cramps. Thus, my instinct is to avoid pain at all costs. Sometimes, I feel like my entire life is about that one thing: avoiding pain. I didn’t want to feel rejection from my parents—so I spent my entire childhood and young adult life doing everything I could to make them proud of me. I didn’t want to feel shut out from my ex-husband—so I begged, groveled, and shrank until I was small enough for him to love me. I didn’t want to feel lonely—so I stayed in a relationship I knew was causing me to fade away.

I think that’s what running away does—it causes you to fade away.

Despite this fear of pain, I started running marathons. Not surprisingly, my objective was to figure out how to gain the extraordinary confidence boost of crossing that finish line WITHOUT ANY PAIN! It turns out, that doesn’t exist. I discovered that no matter how hard I trained, how expensive my shoes were, or how many pain-killers I downed at Mile 18, my feet always ended up feeling like they were carrying a semi, my lungs began to burn, and my stomach would try to eat itself. The second I pumped my legs past 26.2 miles, I’d bend over and see stars, as I retched a trickle of spit (all that was left inside me) into the pavement. And during that grossest of gross moments, I carried the knowledge that I just did one of the hardest things I could ever do, and what a splinter of joy that knowledge provides…

-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Hara dhania (Fresh coriander) handful
-Cooking oil 3-4 tbs
Prepare Biryani Masala:
-Tez patta (Bay leaves) small 2
-Hari elaichi (Green cardamom) 3-4
-Badi elaichi (Black cardamom) 1
-Laung (Cloves) 5-6
-Darchini (Cinnamon sticks) 2-3
-Badiyan ka phool (Star anise) 2
-Shahi zeera (Caraway seeds) 1 tsp
-Sabut kali mirch (Black peppercorns) 1 tsp
-Aloo bukhara (Dried plums) 2-3
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Dhania powder (Coriander powder) 1 & ½ tsp
-Zeera powder (Cumin powder) 1 & ½ tsp
-Haldi powder (Turmeric powder) 1 tsp
-Jaifil powder (Nutmeg powder) ¼ tsp
-Falak Pink salt ½ tsp or to taste
-Javitri powder (Mace powder) ¼ tsp
-Cooking oil 1 tbs
-Kaju (Cashew nuts) 10-12
-Kishmish (Raisins) 2-3 tbs
-Ghee (Clarified butter) ½ Cup
-Pyaz (Onion) sliced 2-3 medium
-Tamatar (Tomatoes) sliced 2 medium
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Hari mirch (Green chilli) paste 1 & ½ tbs
-Dahi (Yogurt) whisked 1 Cup
-Lemon juice 2 tbs
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Podina (Mint leaves) chopped 1-2 tbs
-Hari mirch (Green chillies) 2
-Zarda ka rang (Orange food color) ½ tsp or as required
-Biryani essence ½ tsp substitute: kewra essence
-Podina (Mint leaves) chopped 1-2 tbs
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Hari mirch (Green chillies) 2-3
-Ghee (Clarified butter) 1-2 tbs
-Hara dhania (Fresh coriander) chopped

Directions:
-In a bowl,add rice,water,wash thoroughly & soak for 30 minutes then strain soaked rice & set aside.
-In boiling water,add pink salt,cumin seeds,black cardamom,mint leaves & mix well.
-Add soaked rice,mix well & boil until 3/4th done (5-6 minutes) then strain & set aside.
Prepare Meatballs:
-In a chopper,add chicken,fried onion,green chillies,pink salt,coriander powder,cumin powder,black pepper powder,ginger garlic paste,fresh coriander & chop well.
-Grease hands with oil,take small quantity of mixture (10g) & make small meatballs of equal sizes.
-In a frying pan,add cooking oil & fry meatballs on medium flame until golden & set aside (makes 52).
Prepare Biryani Masala:
-In a jar,add bay leaves,green cardamom,black cardamom,cloves,cinnamon sticks,star anise,caraway seeds,black peppercorns,dried plums,red chilli powder,coriander powder,cumin powder,turmeric powder,nutmeg powder,pink salt,mace powder,cover & shake well.Biryani masala is ready!
-In a frying pan,add cooking oil,cashew nuts,raisins & fry until golden & set aside.
-In a pot,add clarified ghee & let it melt.
-Add onion & fry on medium flame until light golden.
-Add tomatoes,ginger garlic paste,green chilli paste,mix well & cook for 2-3 minutes.
-Add yogurt,prepared biryani masala,mix well & cook on medium flame until oil separates (2-3 minutes).
-Add fried meatballs,mix well & cook for 1-2 minutes.
-Add lemon juice,fresh coriander,mint leaves,green chillies,fried nuts,boiled rice,orange food color, biryani essence,mint leaves,fresh coriander,green chillies,fried nuts & clarified butter,cover with kitchen cloth & lid and steam cook on low flame for 12-15 minutes.
-Garnish with fresh coriander & serve!

-Instant coffee 2 tbs
-Bareek cheeni (Caster sugar) 2 tbs
Prepare Hot Fudge Sauce:
-Makhan (Butter) 60g
-Cocoa powder ¼ Cup
-Bareek cheeni (Caster sugar) ½ Cup
-Vanilla essence 1 tsp
-Hot water ½ Cup
-Namak (Salt) 1 pinch
-Semi sweetened dark chocolate chopped 100g
-Cream 1/3 Cup
Assembling:
-Hico Dairy Cookies & Cream ice cream
-Brownie pieces
-Hico Dairy Chocolate Fudge ice cream
-Whipped cream

Directions:
Prepare Coffee Mixture:
-In a cup,add hot water,instant coffee,caster sugar,mix well & set aside.
Prepare Hot Fudge Sauce:
-In a saucepan,add butter & let it melt.
-Add cocoa powder,caster sugar,vanilla essence & mix well.
-Add hot water & mix well.
-Add salt,dark chocolate,on low flame,add cream,mix well & cook on medium flame until it thickens (3-4 minutes).
-Let it cool at room temperature.
Assembling:
-In a serving bowl,add Hico Cookies & cream scoops & spread evenly.
-Add prepared hot fudge sauce,brownie pieces & brush prepared coffee mixture on brownie pieces.
-Add prepared hot fudge sauce,cover with cling film & let it freeze for 1 hour or until set.
-Add Hico Chocolate fudge scoops & spread evenly,cover with cling film & freeze for 4 hours or until serve.
-Garnish with whipped cream,hot fudge sauce & brownie pieces.
-Keep in refrigerator for 1 hour before serving.
-Garnish just before serving.

Prepare Hot Fudge Sauce:
-Saucepan mein makhan dal ker melt ker lein.
-Cocoa powder,bareek cheeni aur vanilla essence dal ker ache tarhan mix ker lein.
-Hot water dal ker ache tarhan mix karein.
-Namak,dark chocolate,cream (add on low flame) dal ker ache tarhan mix karein aur darmiyani ancch per garha ho janay tak paka lein (3-4 minutes).
-Room temperature per thanda ker lein.
Assembling:
-Serving bowl mein Hico Cookies & cream scoops dal ker evenly pheela lein.
-Tayyar hot fudge sauce aur brownie pieces dal dein aur brush ki madad sa tayyar coffee mixture
ko brownie pieces per laga lein.
-Tayyar hot fudge sauce dal ker cling film sa cover ker lein aur 1 hour or set hunay tak freeze ker lein.
-Hico Chocolate fudge scoops dal ker evenly pheela lein aur cling film sa cover ker ka 4 hours ya serve kernay tak freeze ker lein.
-Whipped cream,hot fudge sauce aur brownie pieces dal dein.
-Serving sa pehla 1 hour kliya refrigerator mein rakh dein.
-Serving sa pehlay garnish karein.

Bruleed Goat Cheese Dip

@alexawhatsfordinner brings a lil ✨pizzazz✨ to this whipped goat cheese dip by adding a layer of brûléed sugar and other fantastic toppings that complement the flavor of the cheese!?
Recipe below‼️

Ingredients
-4 slices prosciutto
-8 ounces goat cheese, room temperature
-4 ounces whipped cream cheese, room temperature
-2 tablespoons olive oil
-1 teaspoon kosher salt
-1-2 tablespoons sugar
-¼ cup roasted & salted pistachios, roughly chopped
-5 pitted dates, chopped into small pieces
-¼ cup pomegranate arils
-Toasted crusty bread, for serving

Preparation
-Preheat the oven to 400°F (200°C). Line a baking sheet with foil.
-Arrange the prosciutto on the prepared baking sheet, spacing evenly. Bake for 10-15 minutes, until crispy. Remove from the oven and let cool, then crumble into small pieces.
-In a food processor, combine the goat cheese, cream cheese, olive oil, and salt. Pulse until very smooth, creamy, and fluffy.
-Spread the goat cheese mixture in a shallow bowl. Sprinkle the sugar evenly over the top. Using a kitchen torch, melt the sugar on top until melted and deep golden brown.
-Crumble the crispy prosciutto over the the brûléed goat cheese with the crispy prosciutto, then top with the pistachios, dates, and pomegranate arils. Serve with toasted crusty bread.
-Enjoy!

Herb-Roasted Turkey Breast

Ingredients

1 whole bone-in turkey breast, 6 1/2 to 7 pounds
1 tablespoon minced garlic (3 cloves)
2 teaspoons dry mustard
1 tablespoon chopped fresh rosemary leaves
1 tablespoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons good olive oil
2 tablespoons freshly squeezed lemon juice
1 cup dry white wine

Directions

Preheat the oven to 325 degrees F. Place the turkey breast, skin side up, on a rack in a roasting pan.

In a small bowl, combine the garlic, mustard, herbs, salt, pepper, olive oil, and lemon juice to make a paste. Loosen the skin from the meat gently with your fingers and smear half of the paste directly on the meat. Spread the remaining paste evenly on the skin. Pour the wine into the bottom of the roasting pan.

Roast the turkey for 1 3/4 to 2 hours, until the skin is golden brown and an instant-read thermometer registers 165 degrees F when inserted into the thickest and meatiest areas of the breast. (I test in several places.) If the skin is over-browning, cover the breast loosely with aluminum foil. When the turkey is done, cover with foil and allow it to rest at room temperature for 15 minutes. Slice and serve with the pan juices spooned over the turkey.

Red Wine-Braised Short Ribs

Ingredients

5 pounds very meaty bone-in beef short ribs, cut into 2-inch chunks
Good olive oil
Kosher salt and freshly ground black pepper
3 cups chopped leeks, white and light green parts (3 leeks)
3 cups chopped celery (5 to 6 ribs)
2 cups chopped yellow onions (2 onions)
2 cups chopped unpeeled carrots (6 carrots)
1 1/2 tablespoons minced garlic (5 cloves)
1 (750-milliliter) bottle Burgundy, Cotes du Rhone, Chianti, or other dry red wine
4 cups beef stock, preferably homemade or College Inn
1 cup canned crushed tomatoes, such as San Marzano
1 (11.2-ounce) bottle Guinness draught stout
6 sprigs fresh thyme, tied with kitchen string
Toasted baguette, for serving

Directions

Preheat the oven to 425 degrees F. Place the short ribs on a sheet pan, brush the tops with olive oil, and sprinkle with 1 1/2 tablespoons salt and 1 1/2 teaspoons pepper. Roast for 20 minutes and remove from the oven. Reduce the temperature to 325 degrees F.

Meanwhile, heat 1/4 cup olive oil in a large (12-inch) Dutch oven, such as Le Creuset, over medium heat. Add the leeks, celery, onions, and carrots and cook over medium to medium-high heat for 20 minutes, stirring occasionally. Add the garlic and cook for one minute. Add the wine, bring to a boil, lower the heat, and simmer over medium heat for 10 minutes, until the liquid is reduced. Add the stock, tomatoes, Guinness, thyme, 1 tablespoon salt, and 1 1/2 teaspoons pepper.

Place the ribs in the pot, along with the juices and seasonings from the sheet pan. Bring to a boil, cover, and cook in the oven for one hour. Uncover and cook for one more hour, until the meat is very tender.

Remove the short ribs to a plate with a slotted spoon and discard the thyme bundle and any bones that have separated from the meat. Simmer the sauce on the stove for 20 minutes, until reduced. Skim some of the fat off the top and discard. Return the ribs to the pot, heat for 5 minutes, and taste for seasonings. Serve hot in shallow bowls, with a toasted baguette and extra sauce on the side.

French Apple Tart

Ingredients

For the pastry:
2 cups all-purpose flour
1/2 teaspoon kosher salt
1 tablespoon sugar
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
1/2 cup ice water

For the apples:
4 Granny Smith apples
1/2 cup sugar
4 tablespoons (1/2 stick) cold unsalted butter, small diced
1/2 cup apricot jelly or warm sieved apricot jam
2 tablespoons Calvados, rum, or water

Directions

For the pastry, place the flour, salt, and sugar in the bowl of a food processor fitted with the steel blade. Pulse for a few seconds to combine. Add the butter and pulse 10 to 12 times, until the butter is in small bits the size of peas. With the motor running, pour the ice water down the feed tube and pulse just until the dough starts to come together. Dump onto a floured board and knead quickly into a ball. Wrap in plastic and refrigerate for at least 1 hour.

Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.

Roll the dough slightly larger than 10 by 14-inches. Using a ruler and a small knife, trim the edges. Place the dough on the prepared sheet pan and refrigerate while you prepare the apples.

Peel the apples and cut them in half through the stem. Remove the stems and cores with a sharp knife and a melon baller. Slice the apples crosswise in 1/4-inch thick slices. Place overlapping slices of apples diagonally down the middle of the tart and continue making diagonal rows on both sides of the first row until the pastry is covered with apple slices. (I tend not to use the apple ends in order to make the arrangement beautiful.) Sprinkle with the full 1/2 cup of sugar and dot with the butter.

Bake for 45 minutes to 1 hour, until the pastry is browned and the edges of the apples start to brown. Rotate the pan once during cooking. If the pastry puffs up in one area, cut a little slit with a knife to let the air out. Don’t worry! The apple juices will burn in the pan but the tart will be fine! When the tart’s done, heat the apricot jelly together with the Calvados and brush the apples and the pastry completely with the jelly mixture. Loosen the tart with a metal spatula so it doesn’t stick to the paper. Allow to cool and serve warm or at room temperature.

— RECIPE —

DOUGH
▪340g or 1 1/3c scalded whole milk (heated to 180F/80C then cooled to 90F/32C in the fridge)
▪10g or 2.5tsp instant yeast
▪2 eggs
▪100g or 1/2c sugar
▪100g or 6Tbsp melted butter
▪685g or 5 1/2c all purpose flour (11.7% + protein content)

Add ingredients to a mixer with a dough hook attachment and mix for 3 minutes on low until a dough ball forms. Increase mixer speed to high and continue to mix for another 6 minutes to develop the gluten. The dough should be smooth looking and clearing the bowl at this point.

Transfer dough to a bowl and round it into a ball. Cover the bowl and allow it to sit at room temperature to ferment for 60 minutes.

The dough should have risen by about 30-40%.

Flip dough onto a floured work surface and flour the top of the dough. Use a flat hand or rolling pin to degas the dough a bit.

Roll into a rough square shape that’s around 11”/28cm across. Use a knife or dough scraper to cut off each edge so you’re left with a more precise square shape that’s about 9”/24cm.
Then cut this cleaned up square into 9 3”x3”/8x8cm squares.

Place the donut squares on a parchment lined sheet tray to proof for 60-70 minutes at room temperature. They should have doubled in size when they’re ready.


JELLY
▪500g or 4c raspberries
▪700g or 3 3/4c sugar
▪20g or 1 1/2Tbsp lemon juice
▪20g or 1 1/2Tbsp white distilled vinegar
▪60g or 1/2c fruit pectin

Add berries, sugar, lemon juice, and vinegar to a heavy bottomed pot over medium-high heat, stir to dissolve the sugar and bring to a simmer. Cook for 10 minutes, stirring frequently, until raspberries are softened and have lost most of their liquid.

Press about half of the mixtur through a fine mesh strainer to remove some of the seeds, returning it to the original pot.

Return the pot to the stove over medium high and bring to a simmer, then whisk in 60g of fruit pectin and continue to cook until the mixture reaches 220F/105C.

Transfer jelly into a shallow bowl or two to cool. Then chill in the fridge.


TO FRY AND FINISH
▪40oz/1200g canola or other neutral oil (amount of oil will vary depending on your pot size. Mine is a 6.75qt)
▪Granulated sugar

Add oil to a large heavy bottomed pot and heat to 340F/170C. Fry donuts in batches, allowing enough space around donuts to not get stuck together. After 90 seconds, flip to second size and continue to fry for 90 seconds until golden all over.

Transfer to a wire rack. While still warm, gently blot top and bottom of each donut into sugar to lightly coat.

Transfer jelly to a piping bag and cut off the top to create an opening.

Insert the handle of a wooden spoon into one side of each donut, moving the spoon handle back and forth inside to open up a cavity for the jelly.

Insert the piping bag and squeeze in about 3 Tbsp or 45g into the cavity that you previously made.
