Banana Bread Blondies | Cupcake Jemma

It’s week 3 of the Bake the Book challenge and we’re sharing this corker of a recipe from the Traybakes chapter of the Crumbs book.. The Banana Bread Blondie! It’s a squidgy, fudgey blondie packed full of caramelised bananas, chocolate & pecans and is sure to wow anyone you bake this for!

8″ Square tin
40g light brown sugar
40g unsalted butter
210g very ripe banana

120g Burnt Butter
200g light brown sugar
3 eggs
1 tsp vanilla extract
215g plain flour
1 tsp sea salt
1⁄4 tsp baking powder
160g pecans
50g dark chocolate chunks
150g milk chocolate chunks

  1. What kind of square pan do you use at the bakery? Aluminum, aluminized steel or non-stick?? Any recommendations of brands, size or metal if you only want to own just one??? (Something that’s easily be obtained in the US would be nice!!)

  7. I love Dane so much and this looks delicious. But something Dane said made me want to ask a question. The recipe calls for large eggs (or “large eggs always” as Dane puts it.) I remember earlier videos saying to use free range eggs because you love chickens. Would you consider changing your recipes to re-size things for medium eggs because of the poor welfare associated with large egg production? I’m genuinely a fan and not trying to pick an internet argument. Thank you for another great video x
