Steak sandwich ???? #shorts

Ingredients
– Focaccia bread (I have a recipe on my page)
– Steak (I used ribeye)
– Rocket (handful)
– Onion rings
– Romesco

Method
1. Grill your steak to the temp you like and let it rest before slicing
2. On fresh bread (I don’t bother toasting it) if it’s a day old then toast it
3. Lay on some romesco to both slices
4. Next add the sliced beef, rocket and onion rings
5. Top it and enjoy!

Onion rings
– 1 large brown onion, sliced into 1cm rings
– Pinch salt
– 100g besan flour
– 100ml water

Method
1. To make the batter, simply whisk the water into the besan flour. You may need to adjust the water quantity slightly, but what you are looking for is a batter for the consistency of pouring cream.
2. Place a pot with oil on a med-high heat and bring to 180°c
3. Dust the rings in flour and then into the batter
4. Carefully lower the onion rings into the hot oil and fry for 3-4 minutes, or until golden brown
5. Remove from the oil onto a paper towel and season immediately with salt

Romesco
– 1 red capsicum
– 2 cloves garlic
– 3 tbsp olive oil
– 2 tbsp red wine vinegar
– Small handful almonds
– Salt to taste

Method
1. Rub your capsicum with oil and place in a 200°c oven for 15-20 minutes or until the skin starts to bubble up and char.
2. Place the capsicum into a bowl and put a lid on it. Set it aside to steam for 10 minutes.
3. Remove the skin from the capsicum and blend it with the rest of the ingredients above.

Ocean Trout Wellington ???? #shorts

Ingredients

– 1 small fillet of ocean trout
– 300g Swiss brown mushrooms, diced very fine
– 1 brown onion, finely diced
– 50ml brandy
– 2 crêpes
– 1 bunch kale
– 1 tbsp English mustard
– 3 sheets puff pastry
– 1 egg, beaten
– 1 tbsp olive oil

Method

1. Start by cutting your trout fillets down the centre and flipping the end of one piece to the opposite end of the other piece, making an even thickness all the way through.
2. Season it lightly with salt and then using clingfilm, wrap tightly into a cylinder vac pack and cook in a water circulator at 50°C for 30 minutes.
3. Once cooked, remove and place into ice-cold water.
4. For the mushroom duxelles, sauté the onions and 1 tbsp of olive oil. Once they are translucent, add the diced mushrooms and season with salt and pepper and cook for 6-7 minutes.
5. De-glaze the pan with the brandy and continue to cook until you have a nice dry consistency. This should take roughly 10-12 minutes.
6. Strip your kale from the storks, trying to keep it in the large pieces, then in salted boiling water blanch for 2 minutes. Then, place into ice cold water to stop the cooking and, using a clean tea towel, dry the kale very well.
7. To assemble the Wellington, start with a layer of the crêpes, followed by an even spread of the mushroom duxelles and then a layer of the blanched kale.
8. Remove the trout from the plastic wrap and lightly brush it all over with the mustard. Place this on top of the kale and tightly wrap the crêpe, kale and mushrooms evenly around the trout.
9. Wrap this tightly in clingfilm and refrigerate for at least 1 hour.
10. Lay down one piece of puff pastry, then remove the trout from the clingfilm and place on top of the pastry, add another layer of pastry, making sure you seal the edges well using the egg.
11. Optionally, place another layer of puff pastry as a decorative piece, then brush the whole Wellington with egg wash and sprinkle with sea salt.
12. In a 180°c fan forced oven, bake for 25-30 minutes or until golden brown.

Mexican Brisket + The Best Taco Ever

This “Mexican” Brisket recipe is the beef version of our wildly popular Mexican Pulled Pork recipe that we launched in 2022. A savory pulled pork recipe that is a stark contrast to the sweet pulled pork that I grew up on in the Deep South. That recipe and YouTube video are so popular that the technique made its way into our BBQ Schools.

The history behind the Mexican pulled pork recipe comes from conversation with my competition BBQ buddy Sean Woodson. Woody came up with this savory recipe years ago. We have joked that just because you use hot sauce and fajita seasoning that the recipe “isn’t all the Mexican” since it in no way is any sort of traditional Mexican dish. However, the recipe needs a name, and we can’t think of anything better. Plus, it is super good!

We figured that Mexican pulled pork concept had to be tried on brisket, and well the result were phenomenal! The resulting chopped brisket can be used on all sorts of dishes like tacos, nachos or sandwiches

Fill half with Sprite on bottom
Fill half with Guinness on top

Espresso Martini with Red Bull:
Build in shaker
.5 oz. or 15 ml. Simple Syrup
.5 oz. or 15 ml. Kahlua
2 oz. or 60 ml. Vodka
1 oz. or 30 ml. Red Bull
Add ice and shake
Strain into glass

Greg’s improved Espresso Martini w/ Red Bull
Build in shaker
1.5 oz. or 45 ml. Mr. Black
1.5 oz. or 45 ml. Vodka
.5 oz. or 15 ml. Creme de Cacao
1 egg white
Dry Shake
Add ice and shake again
Add 1 oz. or 30 ml. Red Bull
Slosh around a bit (don’t shake)
Strain into glass
Garnish with espresso beans and a few drops of bitters

Rumple and milk:
Build in glass
1.5 oz. or 45 ml. Rumpleminze
1.5 oz. or 45 ml. Milk

Fireball Bloody Mary:
Build in shaker
4 oz. or 120 ml. Tomato Juice
2 dashes of tabasco sauce
1 large bar spoon horseradish
2 dashes Worcestershire sauce
Pinch of black pepper
Pinch of smoked paprika
2 oz. or 60 ml. Fireball Whiskey
Add ice and roll instead of shake
Open pour into glass
Garnish with celery stalk

Red Bull Negroni:
Build in glass
1.5 oz. or 45 ml. Tanqueray
1.5 oz. or 45 ml. Campari
1.5 oz. or 45 ml. Red Bull
Stir
Garnish with twist of orange
