I’ve been using the Predictive Thermometer from my friend Chris Young’s company Combustion, Inc. (my partners for this video) for several years now and consider it a true gamechanger when it comes to knowing and predicting exactly when your meat will be cooked.

I have a podcast! It’s called The Recipe with Kenji and Deb and I host it with my friend Deb Perelman of Smitten Kitchen. In each episode we talk about the recipe development process–how we take a dish from conception to ready-for-someone-else’s-kitchen to show you what goes on under the kitchen hood when it comes to recipe development. 1. Sheesh what are you guys feeding chickens over there in the states!

  2. 4:34 Thank you for providing the msg/salt ratio! Everywhere I saw online the ratio is weighted heavily to salt. But if I'm hearing you correctly, you do 8 parts msg to 1 part salt. Is that correct? Thanks again for all the videos!

  3. Can't help but feel this is a subtle Our Place and Balmuda ad. Chicken looks good.

  4. Great video! The puns. The little references. The silliness. The giggles. Oh yeah… and the chicken! Yum! All that and zero degrees of Kevin Bacon! 😮 I saw that on Kimmel and just loved it! 🥰 Thank you for keeping us entertained and sharing your fantastic recipes. 👏😁

  5. I am guessing Kenji move out of the house boat or is he using a friend's kitchen or studio now?

  6. Wonder if stuffing the mayo under the skin, then doing the same baking powder treatment you do for chicken wings would result in crispier skin without sacrificing flavor?
