I love the idea but what if we can't use alcohol, any potential substitutes?
I like these "shortcut" recipe versions that show how to get a lot of the same results in less time with fewer complications. They're encouraging to try, and if I really get obsessed, I can always move on to the "real deal." Otherwise I might never even try for the moonshot.

You don't need toppings to make them "proper" Traditionally bagels were plain.
Malt syrup is better than molasses.
