  1. There aren’t strict measurements for this type of dish, it’s all about fresh herbs and personal preference. So use this recipe as a guide rather than a rule.

    Ingredients:

    A few potatoes
    2 beets
    Oil
    Salt&pepper

    500g soft cheese (quark/ farmer’s cheese)
    A handful of dill, chives, parsley
    1 small regular or spring onion
    Flax seed oil, cold pressed
    Garlic

    Method:
    1. Preheat the oven to 200°C (390°F).
    2. Wash and slice the potatoes and beets. Toss with oil, salt, and pepper, then bake for 30–40 minutes until tender.
    3. Meanwhile, finely chop the herbs, onion, and garlic.
    4. In a bowl, mix the soft cheese, herbs, onion, garlic, and flaxseed oil until combined. Adjust flavor with more oil, salt, or garlic to taste.

  8. I need to find a way to make this vegan. Maybe some sort of sunflower seed spread with herbs and silken tofu. I could maybe make a mock herbed cheese.
