Ingredients:
A few potatoes 2 beets Oil Salt&pepper
500g soft cheese (quark/ farmer’s cheese) A handful of dill, chives, parsley 1 small regular or spring onion Flax seed oil, cold pressed Garlic
Method: 1. Preheat the oven to 200°C (390°F). 2. Wash and slice the potatoes and beets. Toss with oil, salt, and pepper, then bake for 30–40 minutes until tender. 3. Meanwhile, finely chop the herbs, onion, and garlic. 4. In a bowl, mix the soft cheese, herbs, onion, garlic, and flaxseed oil until combined. Adjust flavor with more oil, salt, or garlic to taste.
I showed it to my polish mom and she loved it ❤
I want to try it with a spinach artichoke herb base and roasted roots on top, thanks for the inspiration!

If to make it vegan would you suggest something like a plant based yogurt to replace the farmers cheese? This looks delicious
Nothing good about flaxseed oil. PUFAs are really bad

Kartoffeln mit Quark is so nostalgic. The Brits don’t have Quark so it’s hard to recreate now that I live in the UK 😢

I need to find a way to make this vegan. Maybe some sort of sunflower seed spread with herbs and silken tofu. I could maybe make a mock herbed cheese.
