When I made this soup, I accidentally added too much barley, so I’ve halved the amount in this recipe. This makes the soup less thick, which I think works better. If the sorrel is too sour, you can use heavy cream to balance the flavor, but feel free to use whatever you prefer—sour cream, crème fraîche, or even regular cream.
Ingredients:
125g smoked tofu or other alternative, cubed 1 small onion, finely chopped 125g carrot, diced 400g potatoes, diced 50g barley grits 1l stock 280g jar of sorrel Salt and pepper (to taste) 2 boiled eggs Fresh dill, chopped
For serving: Sour cream or vegan cooking cream Bread
Method:
1. In a large pot, heat a little oil over medium heat. Add the diced smoked tofu or sausage and fry until lightly browned.
2. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.
3. Add the diced carrot and cook for another 3-4 minutes until slightly tender.
4. Add the diced potatoes, barley grits, and stock. Bring to a boil, then reduce the heat and simmer for about 10-15 minutes, or until the barley grits and potatoes are cooked.
5. Stir in the sorrel and cook for another 2-3 minutes. Season with salt and pepper to taste.
6. Remove the pot from the heat. Chop the boiled eggs and stir them into the soup.
7. Serve the soup warm or chilled, topped with a dollop of sour cream, a sprinkle of fresh dill, and a side of bread.

Why is no one mentioning that contraption she used to "boil" the eggs like it's totally normal? I have never seen that and, homies, WHAT IS IT??!?!?!?!?!
We call it green borshch or sorel norshch in Ukraine. My mum always loved it but I didnt like it as a kid. Now i do. Should try your version. Because ours is meat (or just broth) potatoes, onions, carrots, herbs and sorrel. And egg, boiled or like our family made it – pouring mixed rae egg in the end of cooking, so there are kinda egg ribbons in there. Also it's traditional to add spinach or young nettle to (or use instead) sorrel. I never added grains or smoked meat. Sounds amazing, definitely should try it.
Oh my God, szczawiowa/sorrel is the best soup! Common in Poland. If you want to skip the smoked meats maybe add black cardamom? It has a nice, smoky aroma ❤
In Slovakia, it's not very common, but I'm Rusyn and we do make it. Same for nettle soup.

Wood sorrel is super common where I live. It tastes like green apples.
In Australia, sorrel is a weed! Also known as docks, or sheep sorrel. It's high oxalic acid content makes it taste sour. Oxalic acid can possibly cause kidney stones when eaten in high quantities, but when cooked, plants like sorrel are relatively harmless. So tasty though!

"Satan smoked sausage" – well, be careful with spelling i guess 😏, also very small it is haha, but that's understandable as his balls are small 🤡, classic for every egocentristic being, sums up his character 🙃 (I know it is "seitan" and it is poor joke, calm down humans)
I could talk for hours about how the characterization of plants as weeds is so wrong. Dandelion? Edible and highly medicinal. Chickweed? Edible. Hairy bittercress, purple deadnettle, galinsoga? All edible. If only people (re)learnt the benefits of these plants instead of destroying them
