Mexican Grilled Chicken – My New Fav Sandwich!

My buddy Judd McCutchen called me one day and said, “Man, I have a recipe you need to try and make a video with that recipe.” The next day I brought a few simple ingredients which was basically chicken thighs, a can of pickled jalapeños and some hot sauce. I made the chicken and immediately decided to make this for the Meat Church Congregation. This delicious grilled chicken can be eaten plain, used in a sandwich, tacos or quesadilla. This chicken is warm, but I wouldn’t consider it too spicy because the jalapeños are pickled. In this video we grilled this directly over high heat, but you can use any type of cooker you desire to make this chicken. We ultimately used this chicken to make a sandwich with cheddar cheese & mayo which complimented the heat perfectly in my opinion.

    Hal-a-Pee-No (Jalapeeno)..lol

  5. Now that's a chicken sandwich! Has to be a flavor bomb with enough kick to get your attention but not enough to nuke your tastebuds. Have you tried thighs at 175℉? Personal favorite. Your mileage may vary!

  7. I use a lot of pickled jalapeños in a lot of my BBQ sauces. So easy to cut that heat down with the smallest things. My kids 2, 4, 8, and 11 love them.

  10. New viewer! Man, everything is on point building this. As you said, change it how you like it… besides grilling the jalapeno's, I'd also grill the onions and add both to the sandwich. And, I'd shred the carrots into a cole slaw side dish. Keeping this in mind for the next camping trip. Peace! Pete in Arizona

Huge fan of any recipe that uses chicken thighs for sandwiches, tacos, enchiladas, etc… this is a very simple yet flavorful method … could replicate it with Franks Buffalo Wing sauce but like the idea of Cholula, its a staple in our kitchen… have made Buffalo/Blue Cheese Shredded Chicken Thigh sliders as well … thanks for the video and recipe!

  13. Definitely giving this a shot! FYI, Y'all's food/meat prices in Texas must be alot cheaper than here in KC MO. Lol Just that small pack of thighs is $15 at Price Chopper. Its $36 for the Costco big pack of thighs….I sure miss the fresh tortillas from HEB in San Antonio…But i digress..
