6 Green Paneer Curry

Ingredients:-

For Green Paste

Gangavalli / Purslane- 1 Bunch
Gongura / Sorrel leaves- 1 Bunch
Moringa / Drumstick leaves – 1 Bunch
Thotakura / Amaranth leaves – 1 Bunch
Swiss Chard – 1 Bunch
Bachali Kura / Malabar Spinach – 1 Bunch
Oil – 1 tsp spn
Ginger- 1 inch
Garlic cloves- 10
Green chillies- 8
Water – 1/4 cup

In a pan add oil, ginger, garlic, green chillies and sauté it.
Add water , all the 6 green leaves and cook for 3-4 minutes in a open pot. “Do Not Cover The Leaves while cooking”

Let it cool and grind into fine paste.

For Gravy

Paneer – 200g
Oil – 1 tb spn
Cumin – 1 tsp
Garlic chopped- 1 tsp
Onion chopped- 1
Salt – 1 tsp
Turmeric – 1/4 tsp
Tomato purée – 1 cup
Coriander powder – 1 tsp
Cumin powder- 1/2 tsp
Garam masala – 1/4 tsp
Green Paste – 2 cups
Nutmeg powder- Pinch
Butter- 1 tb spn
Water – 1/4 cup

In a kadai add oil, cumin, garlic, onion, salt and sauté it till onions turn golden. Then add turmeric, tomato purée and cook till oil oozes out. Then add coriander powder, cumin powder, garam masala.
Add ground green paste, and cook it for 6-7 minutes while mixing continuously. Add pinch of Nutmeg powder, Butter, Paneer Cubes and cook for 2-3 minutes.
Adjust seasonings and serve it.
Garnish with Butter and Raw Onions

I also have Malabar spinach but we don't have gongura. Youngsters these days don't know about these things, it's good that you teach these to the younger generation.
