    It's doughy, because it didn't expand the right amount because the tension wasn't right, and there wasn't a sharpindentation on the underside to heat the centre

  7. Like others have said, proofing is key as well as stretching and folding. Also, check to see if your yeast is active. Heat the milk up slightly and mix the yeast in, wait for a bit to see if it bubbles. If it does, you have active yeast!
