  1. Ingredients:

    250g flour  
    250g warm milk  
    60g vegan yogurt or 1 egg
    4g instant yeast  
    1.5 tbp sugar
    Pinch of salt  
    25g butter, melted  
    Oil (for frying)  

    Method:

    1. In a large bowl, combine the flour, milk, yogurt or egg, instant yeast, sugar, and salt. Mix well until you have a smooth batter.  

    2. Cover the bowl with a clean kitchen towel and let the batter proof in a warm place for about 30-45 minutes, or until it becomes bubbly and risen. (You can also prepare it in advance for another day and leave it in the fridge overnight).

    3. Stir the melted butter into the batter until fully incorporated.  

    4. Heat a pan over medium heat and add a small amount of oil (this will make the pancakes crispy).  

    5. Dollop about 1,5 tablespoons of batter into the pan for each pancake. Fry until the bottom looks brown, about 2-3 minutes.

    6. Flip the pancakes and cook for another 1-2 minutes, or until golden brown and crispy.  

    7. Repeat with the remaining batter, adding more oil to the pan as needed.  

    8. Serve warm with your favorite toppings, such as maple syrup, fresh fruit, or jam, and of course sour cream.
