It doesn’t have to be Cinco de Mayo to enjoy this corn and black bean salsa, but it’s perfect for the holiday!

– 2 cups sweet corn, frozen (thawed) or canned
– 1 can fire-roasted tomatoes
– 1 can black beans, drained and rinsed
– 1/2 cup diced red onion
– 1-2 tsp chipotle powder
– 1 jalapeño, seeded and diced
– 2 tsp lime zest
– 1 tbsp lime juice
– 1 tsp kosher salt
– 1/2 cup chopped cilantro
