tbh a weird cookie you should try is spinach cookies! i made cookies where i used finely chopped spinach (pretty much puréed spinach) and mixed it into the dough, and then i used white chocolate chips in it. it was really nice, the only part that made me a little disappointed was that they weren't very green, and also even if i used a lot of spinach, they barely tasted of spinach xD but it's worth a try if you like spinach!

My mom used to make cookies with jell-o powder in them. Not jell-o *pudding*. Her recipe used the fruity stuff.
They were really yummy and came out fun colors, since you could use literally any flavor of jell-o you wanted.

I would make the habenero cookies but top them with cream cheese frosting to balance out the flavor
Fun fact!! Removing the seeds does not lessen the spiciness. The seeds dont actually absorb the capsacin. It's the white membrane that absorbs the majority of it. And because when we dressed we usually remove the membrane too we then assume that it's the seeds. The more you know!!
