Could you use brown rice? Instead of white.
Why did you soak the rice? Could you just boil it and save time?
Rice isn't unusual, though a friend told me they made some with CRICKET FLOUR ๐คฎ so… Some challenges are best left untested ๐คฃ
Emmy, I'm concerned about you adding water to create steam in the crumb tray of your Breville Smart oven. Are you not concerned about shorting out the electronics? I've done steam by preheating a ramekin along with the oven and adding water to that.

Is there a particular reason not to reuse the water you drain off of the rice for the water in the recipe?
Two things. First, my mom's gluten intolerant and has made rice bread but I never thought to soak the rice. Second, my brain was like "you cant put yeast in a blender because the blender will chop it up and kill it". No clue where my brain got that one
