It’s Claire Saffitz! She’s in the NYT Cooking studio making three new potato recipes that are perfect for your Thanksgiving table. First up, Pommes Boulangère, a French dish similar to a classic gratin, but instead of cream and cheese, it’s made with stock and caramelized onions. Her Duchess-Style Twice-Baked Potatoes are sort of a mash-up between duchess potatoes and twice-baked potatoes, combining the two techniques for a richly flavored result. Last, but not least, is her Garlicky Mashed Potato Cake, which, as Claire explains, is what would happen if hash browns and mashed potatoes got together and had a baby. Which is your favorite?   2. Great video, but for heaven’s sake, NYT, buy some cutting gloves for your kitchen! Your cooks deserve protection when using the mandoline.

  3. I love potatoes and will definitely try these. Thanksgiving, however, has mashed potatoes with gravy! I make great gravy.
