The Anova Machine is a vacuum sealer. A vaccum seal inhibits the growth of certain bacteria that causes spoilage. In sous vide it is the only way to guarantee that your food is heating properly.
He then put it in a sp, and cooked with a sous vide machine. Cooking it that way ensures that it is cooked at an exact temperature, leading to pretty perfect chicken. Very tender and juicy.
You should do a quick sear on the sides after to give the food some color and crunch.
What temp/how long W the SV?
