Espresso braised mushrooms on sourdough with @KitchenaidANZ Semi Automatic Espresso Machine.

I said it, we’ve all had enough avocado toast (and yes I’m looking at you Babe). So, in partnership with KitchenAid , here’s what I’m making instead using their quiet Semi Automatic Espresso Machine.

Ingredients
1½ tbsp olive oil
20g butter
200g Swiss Brown mushrooms, sliced
Sea salt and pepper, to season
2 garlic cloves, chopped
40ml espresso coffee
2 tbsp cream
2 eggs
2 thick slices sour dough, toasted
2 tbsp grated parmesan cheese
Chopped chives, to garnish

Method
Heat 1 tbsp of the oil and butter in a large frying pan on medium high heat.
Add mushrooms and cook, stirring occasionally for 5 minutes, until starting to brown. Season with salt and pepper.
Add garlic, cook for a further minute, stirring.
Pour in coffee, bring to a boil, cook until reduced by half.
Add cream, cook for a further 2 minutes until thickened slightly.
Heat remaining oil in a frying pan over medium heat and fry eggs for 2-3 minutes, until whites are set.
Serve mushrooms on buttered toast, sprinkled with chives, topped with an egg and parmesan cheese.

-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Dhania powder (Coriander powder) 1 & ½ tbs

-Dahi (Yogurt) 3 tbs
-Blue band margarine soft 2 tbs

-In a bowl,add beef,ginger garlic paste,cumin seeds,kashmiri red chilli powder,meat tenderizer,carom powder,turmeric powder,black pepper powder,red chilli powder,corinader powder,pink salt,lemon juice & mix well,cover with cling film & marinate for 1 hour.
-Add yogurt,margarine,fresh coriander & mix well,cover & marinate for 2-3 hours.
-Thread marinated beef on metal skewer (makes 6).
-In a bowl,add margarine,red chilli crushed,chaat masala,pink salt,lemon juice & microwave for 10 seconds.Glaze is ready!
-Put skewers on (burning charcoal) bbq grill and cook from all sides until done & brush prepared glaze in between.
-Garnish with lemon slices,fresh coriander & serve!

LAY HO MA (how’s it going in Cantonese)! This is one of those beautiful recipes that impressive enough to serve at a nice restaurant, but easy enough to make in the comfort of your own kitchen. Join me in this episode and learn how to make a delicious red kidney bean curry recipe to enjoy tonight!

INGREDIENTS:
1 1/2 cups basmati rice
4 cardamom pods
1 1/2 + 1/4 cup water
1 red onion
5 pieces garlic
medium piece ginger
1 long red chili pepper
1 + 1 tbsp chili oil (https://youtu.be/IkBWsfsEVkM)
1 tsp cumin seeds
1 tsp fennel seeds
1 tsp salt
1 tsp smoked paprika
1 tsp sweet paprika
1 tsp coriander
1 tsp turmeric
540ml can red kidney beans
800ml can chopped tomatoes
1 tsp garam masala
handful of fresh spinach
fresh cilantro to serve

DIRECTIONS:
1. Place the basmati rice into a small saucepan, then rinse and drain 2-3 times. Crush the cardamom pods and add to the rice along with 1 1/2 cups of water. Heat the saucepan on medium high heat. When the water starts to bubble, give it a good stir. Then, cover and cook on medium low for 15mins

2. Finely dice the red onion. Crush, peel, and finely chop the garlic and ginger. Finely chop the long red chili pepper

3. Heat up a sauté pan to medium heat. Add in the chili oil followed by the cumin and fennel seeds. Fry the seeds for a few seconds. Add in the red onion, garlic, ginger, and red chili pepper. Sauté for 4-5mins

4. After 15mins, turn the heat off on the rice and allow it to steam further for another 10mins

5. To the sauté pan, add the salt, smoked paprika, sweet paprika, coriander, and turmeric. Stir and cook for about 30 seconds. Add in about 1/4 cup of water and give the pan a good stir

6. Rinse and drain the canned red kidney beans. Add to the pan and stir. Use a spatula or fork to mash some of the beans while it cooks. Continue to stir and cook for a couple of minutes. Add in the can of chopped tomatoes and stir well. Stir in the garam masala and cook for a couple of minutes

7. Add in a handful of fresh spinach, then cover and cook for about 4-5mins. In the meantime, the rice should be done. Remove the cardamom seeds, then fluff and plate the rice. Plate the the red kidney bean curry with the rice. Garnish with fresh cilantro and a drizzle of chili oil to serve

This turned out super. 38g of protein, done in 20 minutes. Feels kind of like a nutritious uni student meal. For more fibre add a side salad I reckon. Not bad for four ingredients

Nutrition – 500 kcal (38P, 32C, 25F)

1 high protein wrap (normal is fine)
40g baby spinach (chopped)
3 medium eggs
45g feta (crumbled)
Salt and pepper to taste

I cooked mine for 20 minutes at 180C (360F) and was delighted the sides were edible (they burn easily). Should be super in a air fryer too I expect. Great nutrient profile so super result given it’s so low in effort.

1 white onion, diced
1 red capsicum (bell pepper), diced
4 cloves garlic, chopped
230g jar Chipotle in adobo
400g can chopped tomatoes
1 tbsp soy sauce
1 tbsp smoked paprika
400g can black beans, rinsed and drained
1 cup (250ml water)
sliced spring onion, to garnish
Steamed rice and lime wedges, to serve

Method
Heat oil in a heavy based frying pan on medium-high heat.
Add mince, give a quick stir to spread around the pan, season with salt and then leave to brown for about 5 minutes.
Break up the beef with a wooden spoon, scraping all the fond from the base of the pan.
Add the onions, capsicum and garlic, cook for 2 minutes, stirring, until softened.
Stir in chipotle in adobo, tomatoes, soy and paprika. Add black beans and water, bring to a boil, then reduce heat and simmer for 10-15 minutes, until sauce reduces.
Serve chilli on steamed rice, garnished with spring onion and lime wedges.
