Ingredients:
Prepare Galawati Boti Gravy:
-Boneless beef 750g
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Kacha papita (Raw papaya) paste 1 & ½ tbs
-Himalayan pink salt 1 tsp or to taste
-Lemon juice 2 tbs
-Sabut dhania (Coriander seeds) 1 tbs
-Sabut kali mirch (Black peppercorns) 1 tsp
-Saunf (Fennel seeds) ½ tbs
-Badi elaichi (Black cardamom) 1
-Darchini (Cinnamon stick) 1
-Javitri (Mace) 1-inch piece
-Kabab chini (Cubeb pepper) 12-15
-Zeera (Cumin seeds) 1 & ½ tsp
-Laung (Cloves) 2-3
-Hari elaichi (Green cardamom) 4-5
-Badam (Almonds) 7-8
-Kaju (Cashew nuts) 6-7
-Khopra (Desiccated coconut) 1 tbs
-Dahi (Yogurt) ¾ Cup
-Pyaz (Onion) fried ¾ Cup
-Bhunay chanay (Roasted grams) 1 tbs
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tbs
-Cooking oil ½ Cup
-Water ¼ Cup or as required
-Hari mirch (Green chillies) 2-3
-Hara dhania (Fresh coriander) chopped
-Koyla (Charcoal) for smoke
Prepare Burnt Garlic Rice:
-Ghee (Clarified butter) 3 tbs
-Lehsan (Garlic) finely chopped 2 tbs
-Zeera (Cumin seeds) 1 tsp
-Chawal (Rice) sella 2 Cups (soaked & boiled with salt)
-Hara dhania (Fresh coriander) 1 tbs
-Pyaz (Onion) fried 2 tbs
-Hara dhania (Fresh coriander)
-Pyaz (Onion) fried

Directions:
Prepare Galawati Boti Gravy:
-In a bowl,add beef,ginger garlic paste,raw papaya paste,pink salt,lemon juice & mix well,cover & marinate for 30 minutes.
-In small frying pan,add coriander seeds,black peppercorns,fennel seeds,black cardamom,cinnamon stick,mace,cubeb pepper,cumin seeds,cloves,green cardamom & dry roast on low flame until fragrant.
-Let it cool.
-In spice mixer,add roasted spices & grind well.
-Add almonds,cashew nuts,desiccated coconut & pulse for 1-2 times & set aside.
-In the same spice mixer,add yogurt,fried onion,roasted grams,red chili powder,Kashmir red chili powder,grind well & set aside.
-In a wok,add cooking oil,marinated beef & mix well until it changes color.
-Add yogurt & onion paste,mix well & cook on medium flame for 2-3 minutes.
-Add water & mix well,cover & cook on low flame until beef is tender (35-40 minutes).
-Now add ground spices & mix well,cover & cook on low flame for 15-20 minutes.
-Add green chillies & fresh coriander,cover & cook on low flame for 1-2 minutes.
-Give coal smoke for 2 minutes.
Prepare Burnt Garlic Rice:
-In a wok,add clarified butter & let it melt.
-Add garlic & mix well.
-Add cumin seeds,mix well & fry until light golden.
-Add boiled rice & mix well.
-Add fresh coriander,fried onion,mix well & cook on high flame for 1-2 minutes.
-Garnish with fresh coriander & fried onion.
-Serve Galawati boti kabab with burnt garlic rice.
Note:
-If using beef undercut beef, skip papaya paste.

Arabian Pudding with Mango Twist Recipe:

Ingredients:✨☘️

Milk – 2 cups

Vanilla custard powder – 2 tablespoons

Condensed milk – ¼ cup + ½ cup (divided)

Bread slices – 8 (edges removed)

Mango puree – 2 cups

Sugar – ¼ cup

Fresh cream – 1 cup

Instructions:✨☘️

1. Prepare Custard:

In a saucepan, combine 2 cups of milk, 2 tbsp vanilla custard powder, and ¼ cup condensed milk.

Mix well and cook over medium heat for 3–4 minutes until it thickens slightly.

Remove from heat and let it cool down just a little.

2. Layer the Bread:

Cut the edges off 8 slices of bread.

Place a layer of bread slices in a serving mold or dish.

3. Add a Custard Layer:

Pour the warm custard mixture over the bread layer evenly.

4. Prepare Mango Layer:

In a pan, cook 2 cups of mango puree with ¼ cup sugar on low heat for about 5 minutes.

Let it cool slightly, then pour it over the custard layer.

5. Repeat Layers:

Repeat the layering process: another set of bread slices, followed by custard, then mango puree.

6. Final Cream Topping:

In a small bowl, mix 1 cup fresh cream with ½ cup condensed milk.

Pour this mixture over the final mango puree layer.

7. Chill and Serve:

Refrigerate the pudding for at least 2 hours or until set.

Serve chilled and enjoy!

This is the king of Bolognese recipes. Slow-cooked pork and beef melt together with a rich soffritto, peppery pancetta, tomato paste, passata, and peeled tomatoes to create a velvety sauce that’s full of bold, meaty flavour and satisfying depth. It gently bubbles away for hours, developing that silky richness with every stir. It’s perfect with al dente pappardelle or tagliatelle and creates an incredible base for lasagna too. A splash of milk toward the end adds a creamy finish that balances it together beautifully. Meaty, hearty, and soul-warming, it’s the kind of comfort food you’ll want to eat all week. One bite, and you’ll see why this needs to be on your go-to recipe list.

INGREDIENTS:
500g / 17.6oz pork
500g / 17.6oz beef
100g / 3.5oz pancetta
1 brown onion (chopped)
2 celery sticks (chopped)
3 carrots (chopped)
1 bottle Italian passata
100g / 3.5oz tomato paste
400g / 14.1oz peeled tomatoes
1 glass of wine
1 mug of full cream milk (optional)
Extra virgin olive oil (EVOO)
Salt and pepper

METHOD:
1) Add pancetta to a food processor and blend until finely chopped.
2) In a large pot over low medium heat, add 2 tablespoons of EVOO and the blended pancetta. Let it sweat gently, then add the chopped onion, celery, and carrots. Cook the soffritto with the lid on for about 10 minutes. Every 2 minutes, check and stir to prevent burning using a wooden spoon.
3) After about 7 minutes, or when all ingredients are tender and glossy, add a splash of red wine, close the lid again, and let it finish cooking. Drizzle in a little more EVOO, then add the ground beef and pork, using a wooden spoon to break up the meat really well, and mix it into the soffritto until well incorporated.
4) Once the meat turns grey, pour in the remaining wine and mix well. Let it simmer for 10 minutes than season with a generous amount of salt and pepper. Next, stir in the tomato paste and mix until it’s spread throughout the meat, then add the passata and peeled tomatoes.
5) Cover with a lid and cook on low heat for 3 hours. Every 30 minutes, check the sauce, give it a stir, and make sure nothing is sticking to the bottom.
6) After 3 hours, remove the lid, stir the sauce well and continue cooking uncovered for 1 more hour. Add more salt and pepper to adjust the seasoning (after you taste it), and scrape the bottom of the pot as you stir. Keep the heat low.
7) If you want a silkier sauce, add a splash of full cream milk and let it cook for another 5 minutes. This step is optional, but highly recommended.

Curried sausages 🥘

Curried Sausages:
serves 4

Ingredients
1 tbsp neutral oil (vegetable, canola, peanut)
8 thick pork sausages
Sea salt and cracked pepper, to taste
1 brown onion, chopped
3 garlic cloves, chopped
1 carrot, peeled, chopped
2 green apples, cored, chopped large chunks
2 cups (500ml) water
92g Japanese curry stock cubes*
Steamed rice, to serve
Method
Heat oil in a heavy based frying pan on medium-high.
Cook sausages for 5 minutes, turning, until browned all over.
Add onion and garlic, cook for 3 minutes, until starting to soften.
Add carrots and cook for a further 2 minutes, stirring.
Stir in water and stock cubes, bring to a simmer, stirring to dissolve stock.
Simmer for 5 minutes.
Add apples, stir to combine and continue simmering for a further 5 minutes.
Serve curry on steamed rice.

*I like to use the Golden Curry Sauce Mix brand
