Ingredients
Dry Brine (Whole Chicken)
∙25g (4 t) kosher salt
∙12g (1 T) sugar
Dry Brine (Chicken Leg Quarters)
∙20g (3 ¼ t) kosher salt
∙10g (2 ½ t) sugar
Piri Piri Marinade/Sauce (yields approx. 3 cups)
∙150g (1 c) chopped onion
∙250g (1 ½ c) chopped red bell pepper
∙30g (6-8 cloves) garlic
∙15g (5-6) Thai bird’s eye chiles (sug 2 small habaneros)
∙10g (1 1/2 T) smoked paprika
∙15g (1T) kosher salt
∙30g (2 ½ T) sugar
∙200g (¾ c + 2 T) olive oil
∙Zest of 2 lemons
∙50g (3 T) lemon juice (about 2 lemons)
∙20g (1 T + 1 t) white distilled vinegar
For Roasting the Whole Chicken
∙1 whole chicken, preferably under 1.8kg (4 lb)
For Grilling
∙6 chicken leg quarters, deboned (or bone-in if preferred)
∙Olive oil or pan spray, for grill grates
Instructions
1. In a food processor, process onion, red bell pepper, garlic, chilis, paprika, salt, sugar, olive oil, lemon zest, lemon juice, and vinegar until smooth but still a little chunky
2. Blend until broken down and saucy, but not completely smooth. The texture should be loose and rustic.
3. Reserve half of the marinade in the fridge for use during cooking and finishing.
Oven Method (Whole Spatchcocked Chicken)
1. Flip the chicken breast-side down. Using kitchen shears, cut along both sides of the spine and remove it. Flip the chicken breast-side up and firmly press down to crack the breastbone so the bird lays flat.
2. Rub chicken all over with the salt and sugar mixture. Let sit uncovered for 25 minutes at room temperature.
3. Liberally brush both sides of the chicken with half of the prepared marinade. Refrigerate uncovered overnight. Reserve/refrigerate unused marinade.
4. The next day, preheat oven to 285°F (140°C). Place chicken on a rack-lined tray and roast for 1 hour and 15 minutes. The internal temperature should reach 135–140°F (57–60°C) in the breast.
5. Increase oven temperature to 475°F (245°C). Brush the bird liberally with reserved marinade (about ¼ cup). Roast for 15 minutes, then brush again lightly and roast an additional 10–15 minutes until deeply browned. Rotate bird during the final 5 minutes for even caramelization.
6. While the chicken finishes roasting, pour the remaining marinade (approx. 1 ½ c) into a saucepan. Bring to a boil and simmer for 10 minutes to reduce and sterilize. Stir frequently.
7. Once chicken reaches 165°F (74°C) in the breast and 175°F (80°C) in the thigh, remove from oven. Brush one final time with the cooked sauce and let rest for 10–15 minutes. Carve and serve.
Grilled Method (Chicken Quarters)
1. Using a paring knife, debone the chicken leg quarters, keeping skin intact. You can also grill bone-in.
2. Season both sides of deboned leg quarters with salt and sugar mixture. Let sit for 25 minutes.
3. Spoon approximately 3 T of marinade per piece, coating thoroughly. Refrigerate overnight uncovered.
4. Preheat grill to 375–400°F (190–205°C). Oil grates generously to prevent sticking.
5. Place chicken skin-side up on the grill. Dab with more marinade. Close lid and cook 3–5 minutes.
6. Carefully flip to skin-side down. Grill another 3–4 minutes. Sauce the exposed side again. Repeat flipping every 3–5 minutes, saucing and rotating as needed for even browning.
7. Grill for a total of 25–30 minutes until skin is well rendered and internal temp reaches ~180°F (82°C). Remove from grill and brush with cooked, reduced peri peri sauce while resting.

***TOPPING RECIPE***
1 cup (237mL) buttermilk (or half yogurt, half regular milk)
4 tablespoons (50g) cold butter, grated
1 tablespoon starch
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt (add a little more if using unsalted butter)
1 1/2 – 2 cups (180-240g) all-purpose flour (just enough to make the dough come together)
chopped fresh herbs if you want
Combine the ingredients with just enough flour to make the dough come together into something solid enough to roll out. Don’t over-mix; just bring it together into a ball and rest in the fridge for at least 15 minutes before rolling it out. It’ll be sticky, so dust with lots of flour or roll it out between sheets of parchment paper. Slap it on your pie filling, brush the top with egg wash or plain water and bake at 375ºF/190ºC until brown on top and the biscuit feels cooked inside when you poke it.
To make a pie filling … watch the video. It’s way more about technique than what specific ingredients you use, and it’ll depend a lot on how big your pie dish is, how many people you want to feed, etc. If you watch the vid, you should be ready to improvise it. Good luck!

4 ounces semisweet (60% cacao) chocolate, finely chopped
½ cup heavy cream
1 tablespoon corn syrup
1½ ounces browned unsalted butter, cut into small pieces

Here is the detailed recipe of khandvi
*RECIPE*
1. Take a bowl and pour 50 gm of besan along with 50 -100 gm of curd, now add green chilli and ginger.
2. Add 1/2 tsp of turmeric, 1 tsp of table salt, and a cup of water mix it well untill it has consistency aa shown in the video.
3. Now rinse the mixture properly and pour it in a pan.
4. Cook and stir it properly without any pause for 15 to 20 minutes.
5. Once its consistency reached as shown in the video, spread it on the outer face of the thali.
6. Make cuts at the thali and roll them to give shape of khandvi.
7. Now put white til, 1/2 tsp of rai and curry leaves in hot oil and pour the mixture at the khandvi rolls.
8. Now sprinkle coconut powder on it and your delicious khandvi is ready.

Shah Pilaf:
Ingredients
2 cups (400g) basmati rice
3 tsp sea salt
Large pinch saffron threads
250g chestnuts, scored, boiled, then peeled
200g ghee, melted
2 small brown onions, thinly sliced
Sea salt and pepper to taste
750g lamb rump, diced 2cm cubes
1 tsp cumin seeds
50g dried cherries
75g golden raisins
100g dried apricots, chopped
Juice of 1 lemon
6 thin flatbreads
Method
Rinse rice under cold water until the water runs clear.
Transfer to a large saucepan with salt, saffron and cover with approximately 1 litre water, leave to soak for 1 hour.
Place chestnuts flat side down on a board and score the rounded side with a cross, scoring just through to the flesh.
Cook chestnuts in a saucepan of boiling water for 15-20 minutes, until the scored section starts to open up.
Drain and set aside until cool enough to handle, then peel.
Heat 50g of the ghee in a large deep frying pan on medium.
Cook onions, for 10-12 minutes, stirring occasionally, until softened and starting to brown. Season with salt and transfer to a bowl.
Increase heat to medium high, add lamb to pan and cook until browned all over.
Stir in cumin seeds, cook for a further minute.
Return onions to the pan along with chestnuts, cherries, raisins and apricots.
Cook for 2 minutes until well combined, then add about ¼ cup (60ml) of the rice soaking saffron water and the lemon juice.
Bring to a simmer, reduce heat to low and cook for 5 minutes, then set aside.
Bring the saucepan with rice to a boil over high heat, then cook for 5 minutes until al dente. Drain and spread on a flat tray to cool.
Preheat oven to 160°C fan forced (320°F).
Brush lavosh (flatbread) with remaining ghee on both sides. Place 1 wrap in the base of a 2L round baking dish or heavy based round pot. .
Place 4 more wraps around the side of dish overlapping and extending up over the top of the dish.
Place last lavosh in the base to form an extra base layer.
Place ⅓ of the rice in the base and spread to make an even layer. Top with half the lamb mixture.
Repeat layers, finishing with rice. Fold over lavosh to encase the filling and brush with any remaining ghee.
Cover with a lid if you have one, and bake for 40 mins, then uncovered until deep golden brown, 30-40 minutes.

2 cooked and shredded rotisserie chicken breast
12 oz bacon
12 oz cream cheese at rom temperature, at room temperature
1/4 cup fresh jalapeños;chopped
1/4 cup pickled jalapeños; chopped
green onions
1/2 tsp onion, garlic powder, salt and black pepper
1/2 cup Parmesan cheese
1 cup freshly grated medium Cheddar cheese
1 cup queso Oaxaca
Oil for frying
