Shorthing is a nightmare to get hold of in the UK, it's not really a thing here. Just easier to use butter in its place.
You should never twist the dough , straight in and straight out. Twisting will prevent your biscuits from rising.
If there was a pinch of salt this would be the same recipe I use.
If I use buttermilk I use baking soda, my grandma said baking soda with buttermilk π.
