You've done a great job in a short time. Your new garden looks well planned and executed. I'm envious. It looks lovely now but it will be absolutely fantastic in a few years time. I hope you have the health to enjoy it.
In the northeast US, I'm envious of your winter production and projects.
You asked what you can do with mustard greens, and I'd suggest looking at Indian recipes for saag. Chana saag (with chickpea) and aloo saag (with potato) are classics in the US, but there are many variations and I'm sure also alternate recipes that aren't stewed greens in a creamy sauce. The greens can be super pungent — I chop them for cooking outside — but they mellow and get a silky texture with long (or pressure) cooking and don't develop off-flavors like spinach and other brassicas do. I didn't believe it until I did it myself, because I had always seen spinach get mushy and bitter while kale/collards seem to wilt but keep their shape no matter what. Mustards really hit the sweet spot on flavor and texture while being very forgiving on cook time.
Since this revelation on how to use them, of course, my mustard greens have not been very successful in the garden (probably I'm starting them too late into fall). Ah well! There's always some challenge to overcome.

I so wish I had a bigger back yard, I love your chicken coop! What happens if come night the door goes down but not al chooks are in the coop and are still out in their run?
Try doing Kale chips with the mustard greens, lightly oil, add seasoning and bake on low temp, they make great crispy chips 😋

Aphids only attack very weak plants. They won't be able to digest the sap from a healthy plant. Which is why they attack overfertilized crops, underwatered heatstressed plants, that kind of thing. If you have aphids, you need to ask yourself "what am I doing wrong" and NEVER "damn aphids ruining my plants". These plants were unhealthy, aphids would not be here otherwise.

Mustard suggestion: use your freeze dryer and powder it and make it into a zesty seasoning. YUM!
