    Its slimy and gooey, call her mother. Slip her into something comfortable like a half bottle of red wine. I dont know what happens but in 3 months, about, its delicious vinegar!!!

    Oh my goodness! I love you! I gave up after a month. I tried adding water to it and it developed mold. I added my mother to it! And thought that the alcohol killed it. But it just takes time!!!!, and wine!?

    In a country where alcohol is heavily taxed as excise, it makes zero economic sense to make vinegar at home using taxed alcohol.

    My only concern is the alcoholic content of that vinegar. And I don't see a easy way to check that out accurately. I would my vinegar to be an absolute vinegar without alcohol.

    So you are saying the only way to know when is truly ready is by tasting it frequently right? I've made some apple cider vinegar and is now super bubbly but not very sour… any suggestions? I've let it ferment w the apples for 3 wks, and now been drained for another 4wks. Like you said, sometimes it takes up to a yr to reach the desired taste. In this case, do I need to let it burp every now and then?

    The process will speed up if you used a vessel with a larger opening to get more oxygen to your bacterial colony.
