@alexawhatsfordinner really said “dracarys” with this one ??. Why have a regular baked sweet potato when you can have a brûléed one?! This simple twist adds a crunchy texture and caramel-like flavor. ? recipe below ‼️
-1 large sweet potato, scrubbed
-1 tablespoon extra-virgin olive oil
-3 slices prosciutto
-½ tablespoon brown sugar
-½ teaspoon granulated sugar
-1 tablespoon unsalted butter
-1 teaspoon ground cinnamon
-2 tablespoons raw walnuts, chopped
-Preheat the oven to 400°F (200°C). Line a baking sheet with foil.
-Drizzle the sweet potato with olive oil, then use a fork to poke several holes all over the outside. Wrap in aluminum foil and bake for about 1 hour, until very tender.
-Meanwhile, arrange the prosciutto on the prepared baking sheet. Bake for 10-15 minutes, unti crispy.
-In a small bowl, mix together the brown and granulated sugars.
-Cut the baked sweet potato in half lengthwise. Score the flesh with a knife at ½-inch intervals, then spread the butter over both sides. Sprinkle with the cinnamon and the sugar mixture.
-Using a kitchen torch, brûlée the sugar until melted and deeply browned.
-Crumble the crispy prosciutto, then sprinkle over the brûléed sweet potato, along with the walnuts.
