Italian Pasta Salad that's even better the next day

Today, I am making one of my favorite cold pasta salads. This pasta salad is great as a side or a full meal. I call this a two-day pasta sakad, because it will last for two days in my house.

INGREDIENTS
12 oz rotini pasta
8 oz fresh mozzarella cheese
4.5 oz pepperoni
6 oz broccoli florets
2 medium carrots
5 oz jar artichokes
5 oz grape tomatoes
1 cucumber
2.5 oz can black olives
1/2 cup sliced peppercini
sliced red onion
1/4 cup grated parmesan cheese

DRESSING
8 fl oz Vinaigrette
2 Tbsp mayo
1 tsp Italian herb blend
1/2 crushed red pepper flakes
salt and pepper to taste

  2. I make something very similar, and you're right, it does taste better the second day. I think it's because everything absorbs the dressing, especially the pasta.
