  1. Seeing this after starting Lent hits different, ????I want a piece. I’m not catholic btw but a promise is a promise. After Friday I will eat a steak.

  2. We don't get prime cuts anymore. All we see in the stores is choice…. What comes after choice? Butchers blend/mix???

  3. I watch all these videos and I know he's a professional who knows what he's doing but I still worry that his whole arm is going to come off

  5. Love it. Gotta support local beef growers with their grass fed/finished, but it can be a crapshoot sometimes when you don’t have graded beef. Pops swore up and down GRAIN FINISHED!

  6. But some Prime looks more like Choice, and a lot of Choice (esp steaks) looks like Prime. It's not a perfect system, since they can't look into the muscles themselves.

  9. I remember when choice beef started to be what they promoted. Before that alot of shops killed their own beef and hogs.
    But choice got to be so much in demand that they had to lower the parameters to include some select.
    The same with Angus now.
    Everyone wants Angus so the USDA, told me, anything that is more than 51%black hide can be considered Angus. But there is some very good certified Angus programs.
    It is and always will be about
    THE MONEY.

  11. Industrial beef is graded by a camera and computer. USDA Prime is no longer real prime. Yours is graded by a human not a machine.
