Your new favourite Breakfast is here.. Breakfast Bowl Cupcakes | Cupcake Jemma

We’re into the second week of the Bake the Book Challenge and we couldn’t;t be more excited to share the recipe for the Breakfast Bowl Cupcakes!! It’s a super moist yogurt sponge, filled to the brim with a blueberry goo, topped with a duo of yogurt & blueberry buttercreams and finished with a selection of homemade granola & fruit! GRANOLA TOPPING
30g honey
10g light brown sugar
1 tbsp water
⅛ tsp vanilla extract
1 tbsp sunflower oil
50g rolled/porridge oats
15g pumpkin seeds,
15g sunflower seeds
10g sesame seeds
15g chopped almonds
pinch of sea salt
pinch of cinnamon

BLUEBERRY GOO
400g frozen blueberries
125g caster sugar

YOGHURT SPONGE
155g self raising flour
¼ tsp bicarb
140g caster sugar
pinch of sea salt
⅛ tsp ground nutmeg
85g olive oil
190g plain yoghurt
2 eggs
¼ tsp vanilla extract

BLUEBERRY AND YOGHURT BUTTERCREAMS
285g soft butter
¼ tsp sea salt
450g icing sugar
1–2 tbsp blueberry goo
1–2 tbsp plain yoghurt

ADDITIONAL TOPPINGS (OPTIONAL)banana chips, freeze dried raspberry or strawberry pieces, coconut flakes etc.

  5. Hi Jemma last week I went to maganolia cake shope I ate avanilla cupcake I swear it was the beeessst vanilla cupcake I ever ate can you please get the recipe and tell us how is it…I trust you because all my favorite cake recipe is your recipe but that vanilla cupcake was amazing

  8. Gemma I love your recipes but I do have a problem when it comes to making your cupcakes. Mine always come out with flat tops that land out spreading onto my cupcake trays. I've tried using less batter and while that stops the spread onto the cupcake trays I still end up with flat tops ☹ Is there something I'm doing that's making this happen? Any advice would be greatly appreciated… ????

  12. Love you did wet + dry method! I find they are more forgiving than your usual all in one method (probably because I don’t have stand mixer????). They always come out with perfect flat top even when I tweak potion or swap ingredients and always. I’ve done your chocolate and syrup sponge in smaller portions without egg or swapped ingredients when in a pinch and always successes!! Thanks Jemma ❤
