SHAKARKANDI KI CHAAT
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2
Ingredients
For Boiling Sweet Potato
4 medium Sweet potato, शकरकंद
Salt to taste, नमक स्वादअनुसार
1 tsp Sugar, चीनी
Water, पानी
Oil for frying, तेल तलने के लिए
For Hare Tamater ki Chutney
1 tbsp Ghee, घी
1 Dry red chili, broken into half, सूखी लाल मिर्च
A pinch of cumin seeds, जीरा
A pinch of fennel seeds, सौंफ
A pinch of onion seeds, कलौंजी
2 Cloves, लौंग
1 inch Ginger (peeled & finely chopped) अदरक
6-7 Green tomatoes, cut into diced, हरा टमाटर
Salt to taste, नमक स्वादअनुसार
⅔ cup Jaggery, roughly chopped, गुड़
Water as required, पानी
1 tbsp Vinegar, सिरका
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
For Lotus Root chips
3-4 medium Lotus roots, thinly sliced, कमल ककड़ी
Water, पानी
Oil for frying, तेल तलने के लिए
½ tbsp Prepared Chaat Masala, तैयार किया हुआ चाट मसाला
For Chaat Masala
1 heaped tbsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ
1 ½ tsp Coriander seeds, धनिया की बीज
2 Green cardamom, हरी इलायची
1 Clove, लौंग
½ tsp Black peppercorns, काली मिर्च के दाने
4-5 no. Fenugreek seeds, मेथी दाना
A pinch of onion seeds, कलौंजी
Salt to taste, नमक स्वादअनुसार
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Dry mango powder, अमचूर पाउडर
For Fox Nut
1 cup Fox nut, मखाना
Prepared Chaat Masala, तैयार किया हुआ चाट मसाला
Salt to taste, नमक स्वादअनुसार
Other Ingredients
Oil for frying, तेल तलने के लिए
2 tsp Ghee for shallow fry, घी
For Garnish
Curd, beaten, दही
Prepared Chutney, तैयार किया हुआ हरे टमाटर की चटनी
Pomegranate pearl, अनारदाना
Coriander sprig, धनिया पत्ता
Process
For Boiling Sweet Potato
In a sauce pot, add sweet potato, salt to taste, sugar, water and boil it for 5-7 minutes or until cooked.
Peel it and keep it aside for further use.
For Hare Tamatar ki Chutney
In a kadai, add ghee, once it melts, add dry red chillies, cumin seeds, fennel seeds, onion seeds, cloves and let it splutter well.
Add ginger, green tomatoes, salt to taste, jaggery, water as required,cover it with the lid and cook it for 4-5 minutes or until cooked.
Add vinegar, degi red chili powder and mix it well.
Keep it aside for further use.
For Chaat Masala
In a pan, add cumin seeds, fennel seeds, coriander seeds, green cardamom, cloves, black peppercorns, fenugreek seeds, onion seeds, salt to taste and dry roast them for a minute.
Add degi red chili powder, dry mango powder and mix it well.
Transfer it to a grinder jar and grind it in a smooth powder.
Keep it aside for further use.
For Fox Nut
In a kadai, add oil, once it’s hot, add fox nut and fry until crispy.
Transfer it to a bowl, add prepared chaat masala, salt to taste and mix well.
Keep it aside for further use.
For Shallow Frying Sweet Potato
In a kadai, add ghee, once its melt, add sweet potato and fry well.
Keep aside for further use.
For Lotus Root chips
Sliced the lotus root and keep in a bowl.
In a kadai, add oil, once it’s hot, add lotus root and fry until crispy.
Transfer it to a bowl, add prepared chaat masala and mix well.
Keep it aside for further use.
For Garnish
In a serving plate, add curd, prepared chutney, fried sweet potato, lotus root chips, fried fox nut, sprinkle some chaat masala, pomegranate pearl, coriander sprig and serve.
